I think Mumbai is a good place for tasting food from everywhere else in India and Delhi too cause a lot of people from every region of the country stay there and bring their culture with them.
In the capital New Delhi, there is a permanent exhibition of local handicrafts, culinary delights, etc named Delhi Haat . Also, various food festival are held during festivities around Christmas & new year from October to February. Lot of info available on net.
Brown ones are called coconut, and the ones shown in this video are called as "Tender Coconut" but he has referred to it as "Coconut" mistakenly. Tender coconuts are removed from the tree before it becomes a coconut. So if we leave the tender coconut on the tree the coconut will grow inside that fibrous outer shell which you can see in the video. Then they remove it from the tree and open the fibrous shell which is outside to get the coconut which is brown in colour. The tender coconut when it's left on the tree for its full growth the outer green(sometimes orange colour) turns into brown and then they remove that outer brown fibrous shell to get the brown coconut(the real coconut with hard brown shell). However, tender coconut contains more water and flesh which is very tender, so you can drink the water(it's a natural beverage/juice) and then scoop out the tender flesh which is inside the tender coconut and eat it. Here this juice guy is scooping out that tender flesh and is grinding that into a paste with cashews and some milk, (even sugar I am not sure) may be and then he puts that paste into the empty tender coconut and tops it with fresh cream and cashew nuts.
They mentioned it because in west they don't have tender coconut in green color. In places like Hawaii or Seychelles also you'll see orangish tender coconut
I doubt you woud find every region food at one place. i am from south india (Bangalore) and i havent tasted till date all food from my state(province). So even i wish we had such place with same authentic taste of that region. Note in India every 100km the food and culture changes.
the best part of indian street food is how affordable it is! someone who has less than a dollar can have reasonable amount of food at the street, so huge props to the street vendors for carrying on and feeding us :D and it's always so yummy! even when it's vegeterain!

Bread does not only mean the one which is used in sandwiches. Bread is also used as a generic term for rotis/ Bhakri etc. It is like saying Biryani, pulaos, pulihora etc are rice dishes. So Nan, roti, phulka are types of bread.

But as he says this is what they were taught, mind you by Indian restaurants abroad. I have seen menus, ready made Naan packs from India have this wording abroad. I am sure if they can pronounce pakoda with their accent they could have only said Naan. But Indians told them the wrong thing it isn't their fault.
