My question is - Will the resulting carbonation and fermentation be the same if I use a balloon vs the swing top lids? Will it be fizzy enough? The ones in this video don't seem that fizzy? I was also thinking of plastic soda bottles for safety. Would love to hear your thoughts.

I'm aware skin of Ginger has yeast on it's own but man using for sodas is clever idea! I reckon you already clean the bottle before making it otherwise it will get moldy! Might do one, if I know how without turning intro wine.

What if you add sugar on top of lime peels (zest them after juicing them) and keep it aside for maceration - so all the lime oils are drawn out. That could enhance the taste of lime soda? I would definitely try this.

The carbonation power you can decide it by the quantity of sugar you put in the bottles. Maximum 8g per liter, NOT MORE. glass is always better

When you use ginger for yeast it's completely like a lottery it may get good or completely sour
Fresh ginger always work for me... but you are right, old strange ones may go wrong. If it doesn't look alive, reject it.

A really small quantity, probably less then 1%
It's a soda/pop. The fermentation in this one produces C02.
Can we conclude that there is possibly 4-5% alcohol.
Maximum 1% but at the end of the fermentation, this means at least after 5 days
