Goan Red Pork Roast
Ingredients required for pork marinade
1 kg Pork (boneless & less fat)
1 tsp OR 30-35 black peppercorns
10 cloves
1 tsp cumin seeds
2” cinnamon stick
2 black cardamom
1/4 tsp mustard seeds
2 Kashmiri chilies
1 small onion (roasted)
3 green chilies
8-10 garlic cloves
2” ginger piece
1/2 tsp turmeric powder
1 tsp sugar
1 tsp salt
vinegar (I’ve used Apple Cider vinegar)
Other ingredients required
2 Kashmiri chilies
2” cinnamon stick
2 cups of water with remaining marinade
Cilantro for garnishing
Oil
Salt to taste
