I agree the black and white works better. It's best when the depth of field isolates your sitters. I wonder if taking a series of shots on a digital camera might warm them up so they're positioned less like in a Victorian portrait? On the other hand you could seek out sitters in Victorian dress and homes?! There's something about 8x10 that seems to impose a quietness, but it's also a static quietness, or maybe a formality.
I did not know photos of strangers can be so pleasing, fascinating portraits those are...

the double exposure is actually very similar to an old trend from the 70s (i think). i’ve got a photo of my dad exactly like this. so rad.

It’s a bit of both, I definitely try to control the scene whilst still making sure that they are in a position that they feel is natural

Great double accidental exposure!! I also have started BW film use also and I also have started to like it more too. I think that is as you say, “maybe is due to the lack of restoring the color and just liking the way BW film comes out” or the great way that any photo looks on BW 🤣🤣🤣

How did you scan the 8x10 film sheets? Camera scanning? How did you hold the sheet film flat?

so since the max aperture is 5.6, do you still meter the same for large format as you do for 35 even though the film is capturing more detail?
Metering is generally not affected by film size
The only variables for exposure are iso, aperture and shutter speed (if you don't use filters)
F5.6 on large format cameras is much bigger than on 35mm because the lenses have longer equivalent focal lengths, so exposure settings will transfer over completely fine, except for when bellows extension has to be factored in
