Happy you ended up reading it! I felt similarly, the deep details were great for me because it helped me get a holistic view of the beautiful world sanderson built. It could drag on at some points. I actually really liked the interludes because it added the depth and breadth of the world. Happy you read it! Hope you do reviews on the next books in the series.

I've been trying to get my daughter to read Sanderson in general. I have failed. I will say this, read ALL the Cosmere novels. They all connect. And Wind and Truth.... yeah... just keep it going. It's all a wonderful whirlwind

Wow, it's funny because the things I liked the most about this book were the Kholin storyline and the interludes, because i love worldbuilding for the sake of worldbuilding, and Dalinar's phylosophy and way of seeing life really connected with me. Really nice video!
@marcduran2791 Maybe once I reread the series, I will be more interested in Dalinar, Adolin, and the Interludes. But the first time reading, I was just really enjoying Kaladin and Shallan’s storyline, and felt that all the other stuff just slowed down the pacing. All the same, I’m reading the second book right now, and I’m getting really interested in every storyline, not just Kaladin and Shallan. Happy New year!
I am sure someone pointed out this in a comment but some the interludes will make more sense down the line, and some are "meanwhile in another place" or basically just easter eggs for other books by the author
