Yeah, I had and sometimes have that problem, but don't worry, there are a lot of good tutorials that could help you with making the videos as well as the designs. I used a tutorial to inspire myself into making the designs, let me search for it, it is pretty well explained as well as pretty good.

Those are great ideas!
If you work mostly when you have motivation then I would recommend you to do something that just takes 1 part, because if you lose motivation you may not want to continue and leave it unfinished.
Edit: It also may be discouraging to feel the pressure to finish it all, so keep it simple! As you go working you'll be able to make better and bigger videos.
