    Went to Goldee's the Friday after they won #1 and saw Chuck doing her thing. Waited 3 hours to get served and it was so worth the wait. The brisket was amazing and the ribs were the best Id ever had.

    That's the thing about Goldees owners they tell everything trying to help others get started, so helpful
    Creekstone brisket like Franklin's, 15 to 16 pounds
    Pickle juice and mustard binder
    Mesh #16 coarse black pepper
    Then Lawrys season salt
    Low temp first 3 hours to get smoke on, then 275° to 300° to render fat, take off at 195° to 198° or probe tender, wrap in peach butcher paper pour beef tallow on meat, sit in warmer at 145° for 10 hours until 11 am to serve, make sure plenty of beef tallow on it to absorb

      Have they changed to wrapping in paper? A few videos I've seen show them using foil to wrap for the warmer.

      @@bgnPrinceton yeah they use foil now and a different seasoning then lawrys or just lawrys now. its a different mix. I don't know the new mix though.

    Was hoping if you could do some interviews on how to plan a bbq business with insights on equipments and budget estimations etc.... 👍

      I'm really glad you commented because I have been working on a series (either 2 or 4 part) with someone prominent in the BBQ business to explain all of that in an estimated or 'roughly this and that' way to assist people or at least know what they are looking at before they jump headlong. It'll most likely be airing in mid December (ish). Thank you so much.
