Mine too. Since August for mine. Poop happened and things had to be ignored. But it's still healthy so I can start a fresh batch. If the scoby is too big like last time, the chickens get a treat. Lol
Girl that wood panel your using on the shelf, your worried its going to trap the heat on the bottom shelf. Get a spade bit put it in a drill, or even a thick normal drill bit. Drill holes in different places on the panel, it will let the heat move about. Dont do to many or you will lose the strength of the wood, but this will work for you.
I’ve thought about it but with the massive weight of the crocks I’d be hesitant to use the shelves in a way it wasn’t designed. The shelf does have a small natural lip that prevents the issue with the natural weight of the crocks.
I have a scoby hotel that I have not done anything with since last year. I noticed that the top scoby is molded. Do I have to throw them all out now and start over when buying a new scoby? Any ideas would be so helpful❤
Once the mold appears it will never be ok, best to start over. Mold is a massive network that goes far beyond what you see and I have learned is incredibly damaging to health.
Unrelated topic/question, I think in one of your videos you said you might make beet kuass(drink). I have a recipe to ferment it. It doesn't say whether to peel beets or not. Do you peel them first?

Good idea! If we decide to switch to those types of fermenters we’ll likely just change shelves that will accommodate the legs better.
Are you able to reverse your shelves? That extra lip would help prevent your jars from sliding off and breaking when you move your racks.

I do not, the bacteria you need to culture is on the skin. I just lightly scrub them with water
