If you defer, the other team has to pick either to kick off or recieve and then the second half goes to the opposite... but if you win the toss and choose to you can start both halfs either kicking off or actually start on defense without a kickoff? Idk but essentially there's 3 choices. And sounds to me like the 3rd choice is to essentially have the other team get the ball at the beginning of both halves.
I think this is where the interviewers were trying to get at, you can apparently decline the ball and go defense both halves or you can defer the decision. Saying I want defense on the field, is saying you want them to get the ball as your decision and then by default they also receive the ball at the second half since in your decision you elected to play defense. But if you defer then the other team can decide if they want to receive the ball or not which usually they want to receive. BUT if you choose to kick I think you lose the ability to receive in either half@@miketyson1717
