Dead space or retention describe the area in a coffee grinder that fills with old coffee. We differentiate between temporary, permanent, and absolute dead space. What does this mean?

As coffee makers, we run a coffee school in Basel, Switzerland. In our courses, we impart coffee knowledge from the plant to the cup. Roasting, sensory skills, barista training. All this knowledge is not abstract but comes from everyday experience. In Nicaragua, we run the Santa Rita coffee farm, in Basel a roastery, the Café Frühling, and the Kaffeemacher Café at Basel SBB train station.
Our team is led by German and Swiss coffee champions. Benjamin Hohlmann was the German Cup Tasters Champion in 2017 and the Swiss Brewers Cup Champion in 2014. Philipp Schallberger was twice Swiss Barista Champion. Felix Hohlmann is the Vice Roasting Champion in Switzerland and has been the runner-up Barista Champion four times. #Kaffeemacher​​
