- Adobo normally uses soy sauce, but in this recipe, we'll use turmeric to give a nice depth of flavor and color to our Adobo. In my version, I've added ripe mango to add some different notes to the adobo. It is unusual but it works really well with the dish. Here's the full recipe: www.chefmorris...

Ilonggo adobo is also dilaw because we use annato seeds in cooking. Also coconut vinegar is the best for adobo.
