I've got a funny feeling that if I ever get flipped out of my kayak on rough, freezing cold waters. That proper phrasing and structure will go right out the window.

Sorry to say but the Message is not entirely correct.
    Procedure would be like this:
Maday Relay Maday Relay Mayday Relay
All stations All stations All stations
This is : ( Name of Vessel)
    Callsigne:
    MMSI:
    at UTC:
    In Position Lat: Long:
    On channel 16 following recieved:
    Mayday
    Shipname of vessel in Distress
Call Signe of Vessel in Distress
    MMSI Vessel in Distress
    Position
Emergency Message: " Ship is flooding, havy listing to starboard side, pumps are failing, can not hold ship.
Will abandon ship in ten Minutes from now."
    OVER
Never roger Ok, or OUT Since all of these maybe common use, but for training not to recommend as not GMDSS standard radio communication phrases.

Also, WRC-07 says not to say your MMSI if you don't DSC-relay....and most radios on a pleasure craft are class D and can't DSC-relay.
