- Champaran is a small region in Bihar and it's very renowned for its non-vegetarian dishes. Ahuna Handi Chicken is one of the famous dishes in the village Champaran. Similar to other Bihari dishes its more likely to be very spicy. Ahuna Handi Chicken is pressured cooked at a very low flame and the clay pot remains airtight by sealing the brim of the pot with flour dough, resulting from the chicken releases more juice which level ups the taste of spices in a handi. Due to dum process and airtight pot the aroma of clay stays within the pot as it got no space to sneak out resulting in the aroma of clay gets infused in chicken and gives a different taste altogether.

#Ashish, that day I commented after watching but today I am commenting b/c I tried this recipe and brother it turned out toooooooooo good! I made without handi since in USA it’s difficult to get but I tried in stainless steel pot and covered with silver foil so everything should intact and it made too good. Yes, it can be cooked like Ahuna Mutton but the cooking time will be lesser as you know chicken takes less time to cook. Chicken will be ready within half an hour and multiply the ingredients according to this recipe. This recipe is for 500 grams of chicken so surely you can multiply by 4 for 2 kg chicken. And don't forget when we increase quantity of meat it will take more time at the same heat.
