Good news! I managed to unlock all the characters and all the karts. So this means I done all the cups in every engine class. But I have to do the missions now! Some missions are very tricky.
I did it by jumping while drifting. There is a brief window between the the time when the shell gets on top of you and when it explodes for you to escape. I hope that helps.
