Anyone notice that the product "The Whole Pig" was blurred out at the end of the segment, but wasn't at the beginning?
No when was it blurred
Yes, but they only blurred the logo, too. You can still read the website on the package (thewholepig.ca). It's also weird that they would blur it since the website highlights the same video with the female narrator.
They f***ed up.
The same reason why on Pawn Stars they will show Pepsi or Coke if the seller is selling the item. but blurr it out when they are outside the shop because they didn't pay them.

Yeah. We preserved food bc of lack of refrigeration, and now preserved foodstuffs become the mainstays of a poor person's pantry bc it's more expensive to keep buying veggies.

Its nitrate for this amount of time and temp. Nitrate will convert to nitrite given time and conditions and here as an example.
For the product being in med temps for as long as they describe, nitrate would be used especially with the use of cultures to add flavor to the product. Smoke considered and smoked and then aged again as mentioned. They mention flavor and this is key for this product. #2 is my bet.

You simply slice big pepperoni into smaller pepperoni. end of story
This isn't how an actual pepperoni is made, you added sodium nitrate which is a preservative so this product is most likely not what a quality pepperoni
You cant really expect that from a commercial product.
It is put in almost every commercial pepperoni.
Sodium nitrate is added to prevent botulism in virtually all pepperoni.
I love how they justify the chemicals being in there.
