Fresh cream has 18-25 percent milkfat meanwhile whipping cream and heavy cream has 30 or more percentage of fat. You can use any of them, all of them will work perfectly just make sure to beat them until stiff peaks and if using fresh cream make sure to use the thick part of it and not the watery part. @meraki007 Did you whip it well? Try to whip it till stillff peaks as If it is not whipped well then it won't freeze like an ice cream.
