A little correction to your statement on making sauerkraut. I have been making it for years. It is definitely NOT a smelly or messy process. And the upside is it has many times the probiotics that are in store bought kraut. It takes only about 5-10 days to bring a half gallon jar up to the tase most people I know like. It does take a little work, but it is well worth it.
I make kraut in jars too. I agree. One thing to remember is quality cabbage makes quality kraut. Super sustainably maintained soil and picking after a good all night rain equals higher nutrient and soil microbe levels will go into kraut. Also keep in mind the microbes break down the cells structure in the kraut to make the vitamins and mineral more easily absorbed by the human cells. And the probiotics survive the stomach acids as they are hidden within the kraut structure, therefore it’s much better than swallowing probiotics in capsule form.
As a child, I remember my mom buying a can of sauerkraut and rinsing it so it wouldn’t be so sour. When I started keto, I looked at the ingredients list. With that being said, I have found the inexpensive kraut is not fermented but has vinegar added. Buy the good brand, it is fermented and therefore, a lot, better for you and better tasting.
Your mom would have been a fan of white kimchi. It's made without the pepper, popular with kids and older folks who don't want the wild, delicious ride that is regular kimchi.

Kraut tips: add mustard makes it yummier, or add homemade salad dressing, we add kraut to a salad of muffuletta, avocado and feta cubes, mini tomatoes, hemp seeds.
Many years ago I went to a restaurant and got hooked on their Corsican Steak. It was simply a strip steak with a layer of pesto and a roasted red pepper on top. Over the years I have done this to chicken as well!

A really good add to your list would be shirataki, yam noodles. They are a great substitute for spaghetti noodles for a keto diet. Very low calories and just 2 carbs and ZERO NET CARBS per serving. They pair very well with Alfredo Sauce. And, for the creative you might try adding them to chicken and stock for keto chicken noodle soup.
You are absolutely right about the difficulties with sour because of sugar. I have experienced that myself and am now craving and eating sour, which never appealed to me before - even apple cider vinegar now tastes like a lemonade to me :-)
Native German here. I rinse my Sauerkraut, add 1/2 apple, 1 smoked ham hog, some pork belly, caraway seeds, some water and cook for 1 hour, turns out great in Instapot. Caraway seed take any gas issue and gives it a pleasant flavor. Last but not least: What do you call a grouchy German? A sauerkraut! ✌️
I'm late to this, but it's important to eat kraft that is fermented and not pickled. Most canned or jarred Krauss are picked (and the canning process kills off any bacterial benefits). Check the cold case for fermented kraut!
What I came here to post: supermarket kraut has preservatives added, so dead bacteria. Supermarket kimchi is heat-canned, so equally dead bacteria. If you ferment your own (I do) eat it raw for the benefits. Fermenting your own is a bigger deal than purchasing at the store, but not hard; lots of info online. Dan
I love my wild caught salmon cooked in my air fryer. I use it mostly to make salmon salad with avocado ,olive oil mayonnaise ,Cucumber, red bell pepper ,celery ,pickles, pickles juice and too many spices to lust lol

There is an Organic probiotic raw brand called Wildbrine and it has no vinegar, which takes out the bitterness and it comes in Garlic flavored as well. I never was a fan of Kraut, until I tried this brand.
Anything with Hemp causes me to have an allergic reaction like some do to peanuts....It took me a few times of eating it to figure out what was making me so sick. Every time I ate it my reaction was much more intense. Thank goodness we finally figured it out. Now we read ingredients for anything new that I try. I’m sure it’s wonderful if you’re not allergic to it but just an fyi....
Not a fan of fermented stuff ( I know - it's great for your gut biome) but the Pesto and Alfredo tips are awesome. I've hit a bit of a plateau recently, so your suggestions will help me get back on track. 👍

I was heading for Type 2 diabetes and cut back on the majority of processed sugars while doing my best to also cut back on natural sugars and as you mention in the video our taste buds start to welcome other foods. I now enjoy fermented (not fermented in alcohol) foods and really enjoy fermented Sauerkraut and Cucumbers. When the cucumbers are finished I end up drinking the juice to improve my immune system to enhance my good gut bacteria. thanks again, have a nice day.
Its super easy to make your own kimchi and sauerkraut and its way better then store bought. I ordered a clay pot that's made for making this stuff off of amazon and make it myself all the time. Its supre cheap and super easy to do and you can make it as strong or weak as you prefer based on how long you let it ferment. Watch some youtube videos about it.

If I'm ingesting healthy fat, keto must use it first before using body fat? If I'm "in ketosis", less daily consumption would burn more body fat? For example, bullet coffee adds significant fat... if I halved that quantity, would the other half come from burning body fat?
So...I make my own 4 out of 5 items on your list. I don't hand peel hemp seeds. I'm not crazy. But... I do sprinkle them on everything. They are like putting cheese on things. I also use cheese.
I microwave spaghetti squash for 8 minutes. 1. Cut in half coated it with spray oil. THEN MICROWAVE IT 8 MINUTE. SOMETIMES ON THE SIZE UFT MIGHT TAKE LONGER. It taste different . Its dryer and taste more like spaghetti.

Dr. Becky... here is a suggestion. I have been on keto for 18 months and vow never to go back! My new go to for flavor is Chipotle peppers in adobo sauce. You can buy them in the ethnic food section or make your own. They are smoked jalapeño peppers in adobo sauce. Put them on top of a pork roast in your slow cooker. Put them on chicken. You will learn to love them. Low in carbs and I think they speed up your metabolism!!!
Sauerkraut is rather easy and definitely not smelly. Properly made, it has a nearly sweet aroma. We make it with red and green peppers and truffle salt.

Thanks for another good video. I make my own sauerkraut it’s a bit of a process but worth the effort. I also make a quick red cabbage kraut with garlic scapes. It’s not only delicious and nutritious but looks great on a salad .

Healthy Middle :::::: Yes red cabbage is started exactly as you would regular sauerkraut. I work with a food scale and add 1% pink Himalayan sea salt. The garlic is optional. I grow garlic and freeze the scapes. The garlic goes in just before you put kraut into mason jar. Where it differs from traditional sauerkraut is that it only stays on counter about 5 days or until the good bacteria takes over the ferment. After that refrigerate it and it’s ready to use. The flavor gets better as it ages and it goes from Red to Purple. I put a couple of tablespoons in middle of salad and it looks beautiful.
I use alfredo over my grilled chicken breasts to give it a little more fat flavor since the chicken is so low in fat. I also kick up my mustard by mixing in some chili sauce. Great on burgers and sausage.
I was never a fan of kraut, but this last st pat's, I got a wiff of it, and couldn't get enough. So I'll anecdotally agree with your assertion about expanded pallet due to no sugar.
I love the Alfredo Sauce suggestion … but in my experience the store bought versions include soybean oil. I thought soybean oil was definitely 'off' the list. Correct?
Good info as always, thank you. I eat a lot of broccoli and it never occurred to me to try Alfredo sauce. I like melting bacon fat over the broccoli and salting to taste. Another big benefit of sauerkraut is that it's high in vitamin C. Kimchi can be tricky as there is a wide spectrum of quality. Like you I enjoy the very hot Kimchi. For whatever reason many lesser spiced Kimchi brands have an unpleasant aroma. Am a pesto newbie, but will definitely try it!
In case people are not aware most sauerkraut in the grocery store no longer has live bacteria from fermentation. If it's canned, jarred, or even in a plastic bag in a refrigerated area and it says "pasteurized" or it has any ingredient other than cabbage, salt, and water this may be the case. A health food store is a possible alternative place for this product if someone wants the live bacteria.

Other keto doctors claim that olive oil is as much inflamatory as monounsaturated seed oils because they both have a single bond. Polyunsaturated seed oils are even worse. Are you certain that the olive oil (in pesto) is good for you?
Any other food suggestions for someone that is having an IgG histamine intolerance with dairy & fermented foods and IgE reactions on pine nuts and hemp seeds/hearts ?
Look for the list if histamine liberators. Citrus is one. I add lemon juice to my water and dehydrated citrus zest to my teas. I also found a list of histamine increasers and watch how many are in my meals at one time. I also avoid all my food allergens. This is what has helped me over time.
I have to stay away from a lot of salt like sour kraut etc but the pesto is a great idea to flavor foods. If you are only doing a small amount that would be good. I've shunned it in the past because it's so high in calories.
i make my own kraut, but i'm german, lol! i eat it all the time, and you're right. when i learned that kimchi is made by asian germans, i was all in, lol! so i like that too. i never thought of alfredo sauce, cuz i like plain veg. never been a fan of cauliflower, so that might be a good choice there. seriously.

Saturated fats isn't bad for your heart. Many people on high healthy fats diets have 0 on coronary artery calcium test. Look into it. May save your life?

Just found out about your channel. Currently doing a High Protein Low Carb Lifestyle. I can't have Kimchi because it is too spicy. Also I can't have Sauerkraut because I it is Cabbage. I have IBS and cabbage give me very bad IBS attack. Don't like cabbage either. So what could I replace Sauerkraut and Kimchi with ?
This was a great reminder for me! Have kimchi on hand but haven't used for a while. I couldn't find a product in Australia that has olive oil though, so made my own..SO much better than bought & cheaper too.
I enjoy sauerkraut and wienies as part of my low carb diet but as with many low carb foods pay attention to the serving size. For kraut it's two tablespoons.

Sugar have not have it for a year now and the only sugar I get is from veges and some fruits like dates 1 to 2 a day makes myday

Watch the ingredients on Kimchi, some are laced with sugar.

A tasty use of hemp seeds is a tablespoon or two of them in the pit space on 1/2 an avocado. A little olive oil drizzle and it’s a tasty treat/meal.
Hemp seeds make my throat itch and swell, I use flax and chia though. Seems to work in most of my recipes

I make pesto myself for the whole family with only herbs, lemon and olive oil. Delicious even in cottage cheese with keto bread.

One note about Kimchi : many brands are loaded with MSG .They do sell Kimchi without adding MSG so be sure to read the labels

I was never a fan of kraut, but this last st pat's, I got a wiff of it, and couldn't get enough. So I'll anecdotally agree with your assertion about expanded pallet due to no sugar.
I love the Alfredo Sauce suggestion … but in my experience the store bought versions include soybean oil. I thought soybean oil was definitely 'off' the list. Correct?

if you are going to try saukraut i recommend trying bavarian saurkraut which most stores sell. milder bite

Good info as always, thank you. I eat a lot of broccoli and it never occurred to me to try Alfredo sauce. I like melting bacon fat over the broccoli and salting to taste. Another big benefit of sauerkraut is that it's high in vitamin C. Kimchi can be tricky as there is a wide spectrum of quality. Like you I enjoy the very hot Kimchi. For whatever reason many lesser spiced Kimchi brands have an unpleasant aroma. Am a pesto newbie, but will definitely try it!
In case people are not aware most sauerkraut in the grocery store no longer has live bacteria from fermentation. If it's canned, jarred, or even in a plastic bag in a refrigerated area and it says "pasteurized" or it has any ingredient other than cabbage, salt, and water this may be the case. A health food store is a possible alternative place for this product if someone wants the live bacteria.
Sauerkraut is great! Love it! It's a wonderful probiotic! Sometimes I eat it as an entre. Or mix it in my sallad. I never heard of Alfredo sauce. 😅

Other keto doctors claim that olive oil is as much inflamatory as monounsaturated seed oils because they both have a single bond. Polyunsaturated seed oils are even worse.
Are you certain that the olive oil (in pesto) is good for you?
Any other food suggestions for someone that is having an IgG histamine intolerance with dairy & fermented foods and IgE reactions on pine nuts and hemp seeds/hearts ?
Look for the list if histamine liberators. Citrus is one. I add lemon juice to my water and dehydrated citrus zest to my teas. I also found a list of histamine increasers and watch how many are in my meals at one time. I also avoid all my food allergens. This is what has helped me over time.
I hear heating kraut kills the lactobacillus, is that true?
I have to stay away from a lot of salt like sour kraut etc but the pesto is a great idea to flavor foods. If you are only doing a small amount that would be good. I've shunned it in the past because it's so high in calories.

i make my own kraut, but i'm german, lol! i eat it all the time, and you're right. when i learned that kimchi is made by asian germans, i was all in, lol! so i like that too. i never thought of alfredo sauce, cuz i like plain veg. never been a fan of cauliflower, so that might be a good choice there. seriously.

Doesn't alfredo sauce contain a lot of saturated fat? Not heart healthy, but the kraut, kimchee, pesto, and hemp seeds are great !
Saturated fats isn't bad for your heart. Many people on high healthy fats diets have 0 on coronary artery calcium test. Look into it. May save your life?

Just found out about your channel. Currently doing a High Protein Low Carb Lifestyle. I can't have Kimchi because it is too spicy. Also I can't have Sauerkraut because I it is Cabbage. I have IBS and cabbage give me very bad IBS attack. Don't like cabbage either. So what could I replace Sauerkraut and Kimchi with ?
This was a great reminder for me! Have kimchi on hand but haven't used for a while. I couldn't find a product in Australia that has olive oil though, so made my own..SO much better than bought & cheaper too.
