I think possibly my favorite part of this video was that bottle of Sweet Baby Ray's chillin' by the stove.. oh and those fries. Ha. Also, don't listen to all these negative comments about your kitchen. It's got character and you can tell that you actually use it. Haha. Have a fabulous day, much love from Alabama!
I tend to do it in the oven already sliced sprinkled with salt, oregano and olive oil cooked at about 180-200 C. Then use they light speed reflexes to put cheese and bacon on them, my oh my i'm hungry now.
drunkhas thanks, i tried it and actually they need to be quite thin, i did cut them no more than 5mm and steam them for 8 minutes and than into oven about 8 minutes from one side + 5 on the other side. But i dont have a temperature on the oven so i went on my instinct. Very good !
I cook them with the skin on, too. I use a combination of mayonnaise and ketchup as a condiment. Some people find that weird, but it works. :) The mayonnaise "rounds out" the acidity of the ketchup. Same for cheeseburgers.
after cutting the potatoes i leave them to soak in water and cachaça (it can be vodka, or anything alcoholic) for a while then i dry them and fry! they get super crispy!!
In germany we often have a mix of Salt and Paprika that we put on our french fries. It is amazing with that light sweetnes of the paprika. I now feel like I have to try other spices and stuff like honey on them.
there's a way I do to make the potato feel crispy outside and soft inside, well, just boil the potato chips in the boiling water for about 5 mins and take them out to dry and chill, then put them into the fridge(u can prepare as much as u want and take them out anytime u want have potato chips,it's convenient) Then just fry the frozen potato chips, take 'em out, add some salt, and it will tastes good.
I like to fry my chips at a lower temperature first (about 150C) and then put them in a spiced batter before frying them at about 180C. It gives an extra crispy result.
So, true Belgian fries are a bit different. You must fry them two times, first à 160° for about 5 minutes, then wait a little but far them to cool down (about 30 minutes). Then a second time at 180° for 2 to 3 minutes, for the fries to be crispy and golden. Old school method use half beef and half horse grease, and it give it a great taste. But it's pretty rare those days. We usually use vegetable oil of beef grease.
I have actually baked them in the oven with chilli powder and smoked paprika. But I think I need some with some cheese. Can never go wrong with cheese.
Mate and I bought some chips once, which we got unseasoned. All we had was pepper, no salt. They where yum. I now always have pepper on my chips. I have a medley of green, red, white and black pepper which I have on my chips, and my kids do to, with some salt though.
I know an even better way, once you boiled and deep fried them(not for long) put em in the freezer wait until they firm up and then fry again. You won't regret it try it.
Rock'n fries Christian! I scored like 30 pounds of beef tallow at this huge "World Beef" event. Long story, but a chef gave it to me... How could I refuse. Got my sites on cooking up some killer Outlaw Fries soon. May have to rock your dad's recipe. Cheers brother!
Awesome video. I like to blanch my fries, toss the in olive oil, salt and cajun spices, then cook then on a tray in the oven. Much healthier than deep frying then but just as tasty :-)
Cool!!!! I'm big fan of your in korea but english skill not well. I want to know this recipe on all time, and now I get it! Otherwise, I have one guestion. What is the best degree in oil to make chips?
Cajun fries all the way, with a bit of ranch to dip, or season them up with taco seasoning, serve with sour cream and salsa....Maybe melt some cheese, have some nacho style fries, OR you could take them and load them up good with chilli bacon and cheese, OBVIOUSLY loaded fries are amazing. OR go basic, one of my favorites, get them good and crispy and douse them in some good malt vinegar....the best thing.
Hey DJ to make your fries look and taste really close to Mc Donalds ones you have to make them a bit "sweeter". For your method try adding a little corn syrup to your boiling salted water. I guarantee it will be closer to the original ones! Cheers matte!
DJ BBQ actually I agree, I've gotten some awesome Skinny Belgian style fries here in Germany, I do miss having the skins on them though. You gave me a craving :P
Nice, I'm gonna try the cheddar one. In Belgium the fry them twice. That's also how I do it. But being Dutch, you should always drown them in mayonaise. :) Delish!! :D
oh yeah man! 3 ways to make chips, but I will tell you, chips and cheese is the best, and I make a version that put fried bacon and melted brie cheese in a water bath. It is crazy!
I'm from Belgium and I find it odd that you cook the potato in the water before... We only wash it on cold water. They're already fluffy on the inside, it's enough I guess for us. And next time, try to season the fries with a mix of Paprika, Salt, a bit of white or black pepper, whatever you like and a final pinch of Cayenne pepper if you like it. That is the true deal. ;) Signed: A potato lover.

Rad Love going out to ya Rachel. Love my Sweet Baby Ray's. We can finally get it in the UK. Stoked.
Rachel Cummings I noticed that too! Sweet Baby Rays is the best! Just got it here in Australia too!
I tend to do it in the oven already sliced sprinkled with salt, oregano and olive oil cooked at about 180-200 C. Then use they light speed reflexes to put cheese and bacon on them, my oh my i'm hungry now.
Great idea.
DJ BBQ Thanks man! if you ever try it out let me now, Oregano goes great with potatoes overall!
HowkeyLL About 20 but it's just about making sure they're good to go.
drunkhas thanks, i tried it and actually they need to be quite thin, i did cut them no more than 5mm and steam them for 8 minutes and than into oven about 8 minutes from one side + 5 on the other side. But i dont have a temperature on the oven so i went on my instinct. Very good !

Marie Shanahan I agree with the mayonnaise and ketchup combo! They go great together :D
***** MY PEOPLE!! :) LOL
Marie Shanahan REUNITED AT LAST XD
LOL!! :) xo
Marie Shanahan Ketchup and Mayo is actually the more common combination of condiments in Germany.
after cutting the potatoes i leave them to soak in water and cachaça (it can be vodka, or anything alcoholic) for a while then i dry them and fry! they get super crispy!!
I love how much energy he has, makes me want to make fries!
Love the drums and bass in the background.
I like the frying pot and drainage thing
Just how my grandpop made them for me growing up, always had a Sunnyside up egg to dip em in though!
Awesome away to do fries, i normally put salt, garlic powder or finely chopped and some parsley
+César Soares nice
Fica perfeita ! Já fiz assim... Experimenta a batata asterix e acrescentar bacon ... Muito bom seus vídeos... Parabéns !!!
Dude!! Your last version you cooked with the Cheddar cheese Add Pickled Jalapeno peppers to those. Bruh!!! On Hit bruh!!! best believe.
Cajun Chef Brand or Trappey's Brand Peppers! work best!
Well if your adding jalapenos you need crumbled bacon Manuel :-P
Yeah!!!!! You Right!! Nate!
Bruh!
Bruh Frog Bruh!!!
You really can't go wrong with French fries, no matter how you chop them, thin or thick peeled or not, it fucking tastes so damn good
Mine, I like mine with a nice bit of Curry powder and chili powder.
In germany we often have a mix of Salt and Paprika that we put on our french fries. It is amazing with that light sweetnes of the paprika.
I now feel like I have to try other spices and stuff like honey on them.

I seasoned my fries with salt, pepper, a pinck of sugar (for that sweetness to balance the saltyness), and garlic powder! so delicious!
OK, that was an AMAZING Genaro imitation
It's amazing how little potato you need. 1 or 2 potatoes makes enough fries for a portion. Much cheaper and tastier than the pre-cut fries!
These fries look like an amazing side dish for a burger!
you guys should try truffle oil and Parmesan cheese. its soo good
i do them with cheese but i also have chili on them so chili cheese fries easy to make really tasty

That Gennaro impression on point Dj BBQ!!
I have actually baked them in the oven with chilli powder and smoked paprika. But I think I need some with some cheese. Can never go wrong with cheese.
In Canada, poutine is a winner. Fries, cheese curd, and lotsa gravy :)
Love Poutine!
When you have them in the bowl thats when I sea salt mine and black pepper tastes nice :-)
The perfect fries!
Yeman. Paprika too
Mate and I bought some chips once, which we got unseasoned. All we had was pepper, no salt. They where yum. I now always have pepper on my chips. I have a medley of green, red, white and black pepper which I have on my chips, and my kids do to, with some salt though.
We like ours with smoked salt, parsley and a fresh green salad.
I know an even better way, once you boiled and deep fried them(not for long) put em in the freezer wait until they firm up and then fry again. You won't regret it try it.
Hey yo dj BBQ. Where did you get that frying pan thing?
McDonald's fries are coated with dextrose, which is sugar. So the water should also contains some sugar so it will caramelize when fried.
30 pounds? LUCKY!!!!!!!!!!!!! What was happening at the World Beef event? Rock Pop's recipe!!!! you won't be sorry.
Garlic granels, onion powder, salt and pepper with some italian herb and smoked paprika ground to a fine powder.
I like to dip mine in aioli.. Really nice. Or sometimes I use sweet potato and when I do the sweet potato chips I like to dip them in tomato relish
That sounds really awesome! I can't wait to try it now. Thanks for the suggestion :-)
Truffle fries! Hell YEAH.
Truffle and Parmesan Fries are the best!!!
paprika, rosemary and garlic. Those 3 things make your fries godlike
also a little beat of olive oil while they're baking
DJ BBQ something i like to do is put fried bacon on the cheese and then put them on the fries, it's spectacular.
Great video! Any news on your pub that was going to become a co-op ?
Slide those cheesy fries over DJ - Those looked great - THANKS!
The Sweet Baby Ray's! Definitely my favourite. Have gone through a lot of those bottles! Greetings from Canada :D
when you fry them add two sliced garlics in oil, fries will get the garlic aroma
My favourite is combo of salt, white pepper, chilli powder.
Tommorow I will start making my own chips cause I usually cook frozen chips
Great way of doing chips!
Hey, that's a perfect impersonation of Gennaro :D
When I bake them in oven, I throw on some salt, rosemary, basil, oregano, herbs that work with potatoes, squeeze some lemon before eating ;)

love cider vinegar.
What a cool dude to give his camera crew some of his chips
Hey DJ to make your fries look and taste really close to Mc Donalds ones you have to make them a bit "sweeter". For your method try adding a little corn syrup to your boiling salted water. I guarantee it will be closer to the original ones! Cheers matte!

I love chips with apple puree.. sounds weird I know but it's delicious :)
hey man, if you get time how would you feel about doing a Chipotle Ketchup recipe! That might be fun!
I got some dried chipotles the last time I was in London (completely unavailable in Germany) I thought a ketchup would be a nice way to use them up!
I used to love chips and cheese at school. Try adding gravy... chips, cheese and gravy.
Its upto u. I just prefer gravy.
I like with cream cheddar and bacon.
this was awesome. I personally prefer a chunkier chip but I enjoyed it!
I like em both.
DJ BBQ actually I agree, I've gotten some awesome Skinny Belgian style fries here in Germany, I do miss having the skins on them though. You gave me a craving :P

Spot on imitation!
This guy rules!
I have to put chili and cheese on my fries!
fries with cheese but grilled at the end so the cheese kinda burns and a dash of Lee and Perrins Worcestershire sauce.
So why do you keep calling them "McDonald's fries"? I'd prefer your fries over McDonald's fries any day.
haha, thanks
Truss
oh yeah man! 3 ways to make chips, but I will tell you, chips and cheese is the best, and I make a version that put fried bacon and melted brie cheese in a water bath. It is crazy!

how much salt was added to water for blanching?
I'm from Belgium and I find it odd that you cook the potato in the water before...
