    Man, those steaks look amazing! 🤤 I'm always trying to up my steak game, so great to see some tips from a pro.
    I'm lucky to get my steaks individually cryovaced, so go from the freezer into a hot water bath for 40 mins or so before cooking in the pan. I find the same as you did with fat not rendering as well when I do this with scotch filet but gives a great result with eye filet or lamb backstrap.
