    My grandma taught me to just tap the bottom of the jar with the palm of your hand to get the air bubbles out.

      Lol that is what I was taught. But the canning police get me every time I don't debubblle. Never had any issues bumping the jar.

    We had snow in Tucson. My daughters electric went out for two hours as I was visiting her I told her I had to get home where I had my solar power source and little stoves I got to stay warm by. Of coarse asked her to come if hers didn’t come back on. It really felt good knowing I was prepared for this even though most wouldn’t think you need these things here in Arizona. My electric was still on but I had what I needed if it had been. Those carrots are such a rich pretty color!

    I had looked for videos about harvesting carrots a few weeks ago. I feel like I wasted my time now that I found this one!!!! I hope I'm not too late harvesting the rest! 🙏

    Danny & Wanda this was the best video I have ever seen on harvesting & canning carrots. Wanda the way you explained every single step was so helpful to me a novice pressure canner & still learning.     I grew carrots last year. They were doing beautifully. I don’t know what in them but I need them from the bottom up. Within 24 hours I have no more carrots. We need about 70 pounds of carrots a year. Thanks for sharing everything.

    Instructions are to vent for ten minutes before adding weight regulator. Venting time is very important to release the air in the canner and the air in the jars.

    WOW!!! Danny & Wanda I sure hope a lot of young kids are watching these videos so they will learn just how much work goes in to the food that they are accustomed to eating. I know at 55 Yrs young I’ve never grown a carrot in my life and I’ve never canned anything well other then putting my homemade soups into jars and freezing them but I’ve never canned anything. I just sit here in utter amazement thinking not only about the work that goes in to preserving them but also growing them and not just throwing seeds in the ground and leaving them. There are all the soil amendments and then the covering and uncovering to ensure the correct moisture when they are first starting out and then the work of thinning them as they grow because that is as important a step as all the rest. Then the washing and scrubbing and light peeling and all the slicing. None of it looks like very hard work but I could tell by the end of it poor Danny looked bone tired!! It’s easy to see that just the bending and physical work that’s required for the harvesting and processing of them not to mention that you are processing 20lbs at a time!! My goodness I think of the bags of carrots I buy in the store and I think they are 3lb bags I can’t even imagine 20lbs of carrots so I’m so glad you took the time to weigh them and show us exactly how much it truly is. Of course I was thinking wholly that’s a lot of carrots but when you did your “carrot math” lol, and to get through a year you would need 156 pints of carrots!!! It blew my mind! We eat like you and Wanda and can easily go through three pints of carrots a week, in side dishes or in soups or stews, some weeks I’m sure I use more then three pints although some of those meals we put in jars for future meals. So I’m so glad you showed this and I’d really love to see when you finish one day down the road, when you finish harvesting and processing all your pints of carrots I’d love to see them all on your storage shelves. I can’t fathom just how many jars that looks like! It’s a real eye opener for me and a realization of how much food it actually takes to feed a family of 2, imagine a family of 12, which it was like in the early 1900’s. It’s no wonder everyone from the youngest to the oldest helped out with every aspect because it’s an incredible amount of work and that’s just carrots! I seriously hope youngsters are watching because I grew up buying all my canned foods at a grocery store and I’m sure the nutrition level of the contents of those cans doesn’t come to half of the nutrients in your carrots not to mention how many are lost in the cans from the stores because of all the preservatives put in them. Danny was so right when he mentioned about the quality of those carrots and how they have sustained you through the years. The latest buzz word is “Nutrient dense food” and more people are attributing the worlds obesity to the lack of nutrients in our foods because of the depletion and devastation to the land that is being done by all the commercial food production. It sure would be interesting to have some sort of lab analysis of your carrots put up against one of those commercial canned ones. I bet without a doubt that yours have more then twice the amount of nutrients and likely a lot more “good stuff” that can only be seen at the microscopic level. I would bet that is the case not to mention the taste!!! The other reason for the obesity problem is because we only have to go to the grocery store with our money that we earned from our jobs that included sitting for 8-10hrs a day and then all the effort we have to expend is to use a can opened to open the can and some even have electric ones so they don’t have to turn the handle even(which is terrific for old and arthritic riddled hands but for the rest of us? Sad). Imagine how much healthier our young kids today would be if they had to expend the amount of work and effort that you did today in addition to all your other farm chores, which I don’t think people even realize, just because you are focused on one project for the day it doesn’t mean you can skip the other chores they still have to get done. You are both incredibly INSPIRATIONAL!!! It’s the only word that comes to mind and I truly feel blessed to have been able to watch your video today! I do have one question since I have already purchased carrot seeds which should be arriving any day now and they are a short stubby variety specifically for container gardening, which I plan to do indoors, can you tell me how deep a container of potting soil you would need and also I think you said carrots require a high PH? I will go back to your other videos on growing carrots because the answer may already be there. Thanks again, like I may have mentioned once or twice in this long story book comment, I loved your video, thank you!🙏🏻🥰🇨🇦

      You need dirt 12 inches or more deep. Yes we had other chores that had to be done. Feeding animals tending greenhouses ect. All in a day's work.

Your editing and video skills are A++++ you are one INCREDIBLE WOMAN!! Danny was blessed so much when you met him,
      I know you will say you were equally blessed and that’s the wonderful thing about your union. I’m sure it was God’s plan all along and that’s true of me and my best friend who walks beside me through life everyday, I can’t even imagine life without a partner anymore and I hope I don’t have to for many many more years to come! Take good care of each other and remember it’s good to take breaks every now and then too!! You two work so hard I think you need to be reminded to slow down, just because our brains can come up with a multitude of things to do around the home it doesn’t mean they all have to get finished as fast as we think them. 😉😀🥰🙏🏻🇨🇦

    I have that peeler and I must say that of all the peelers I have and used over the years, this is the best one.
    1st - it is easy on the hand and wrist, your hand just slides without applying pressure on the veggie, it is razor sharp.
    2nd - if you have trouble holding on to the regular peelers because of arthritis ….you will feel that this one works really well…almost as though you were just ´wiping’ the carrot.
    3rd - the price is right. I love it.

I just got 2 small walk-in greenhouses for seed starting and 4 trellises for my green beans and cucumbers to grow up and save garden space. I am so excited to learn more and get the garden started.     I love watching you and Wanda with your growing. I am in a similar growing zone to you and will be starting my homestead (covid willing) in the next 2-5 years So it is awesome to see what I can grow and how to make it do well.     I just bought a new stove w/safety built-in...........I bought replacement elements and replaced the new ones...........the replacement don't have the sensor built in and it works great......:)

    I like to put up some Taqueria-Style Pickled Carrots too, using a recipe from Kevin West at Saving The Season. They're nice on taco night, or just to add to a Summer salad.
