Hi Jon, Thanks for your comment. To be able to extract juice with hydraulic pressure, we need to shred the fruits to became pulp. The shredding stage is only doing this job and it is not extracting the juice. Pulp temperature increase is hardly appreciate. It is a general misunderstanding that there is an increase of temperature on this stage (also in centrifugal juicers) enough to destroy any nutrient. In fact if you measure the temperature of the fruit and pulp after shredding , there aren’t any appreciable difference (1-2ºC more or less). The juice extraction is, in fact, done by pressure (11 tons). Cold press refers to this stage and the fact, that there is not any additional process with heat involved (such as pasteurization). Main difference with centrifugal juicers is the high air contact during extraction and therefore the fast oxidation of the juice compared with cold press extraction.
