We used to hook some thumping great skate up to 100 lbs (my biggest went 89 lbs and took 1 hour 15 minutes to land on 20 lb line). Noone kept them for the table as funnily enough, they were considered a pest - now, I think that noone knew how to prepare them properly. I remember the epic battles and unstoppable runs of more than 100 metres - often parallel to the beach! Fun times and thanks for bringing back those memories! If you ever visit Tasmania, those skate are still there and beaches on the north-east coast such as Beaumaris Beach, Wrinklers Beach, Dark Hollow, Dainas Basin (behind the sand dunes), Four Mile Beach, are hot spots and further north, the legendary Swimcart Beach - a deep water beach like Chesil Beach, is beach fishing heaven! Big fish head baits with gut attached at night work best. Anyhow, sorry for the long post but I really hope you get to fish the beaches of Oz once. Seek out local knowledge then apply your UK techniques!

Really good video thanks Chris. Used to fish for Thornbacks out of Bradwell until we came to NZ in 1994. We catch Rough Skate off the beach here along the east coast of the South Island and I use the same skinning technique you demonstrated except with traditional pliers. I can almost taste a bottle of Adnams Broadside along with that skate :-)
So do you scrape the meat off those cartilaginous bones? I caught one tonight and ended up filleting it off the"bones". Be easier to cook it first and scrape itoff

I loved this video good as Delia Smith! I would go for a med dry cider....and today we bought "skates eyes" The top bit that looks like a scallop. Apparently fishing was restricted 2 yrs ago so now there is a glut. Hates nice too.

Always enjoy your fishing session videos. I have some skate wings in the freezer, recently caught just down the road from you, but skinning them at home is a bit of a pain especially if they have a load of thorns so how do you remove these please?

I know it doesn't sound quite right, but you should try cooking fish in the microwave. It's the best way of cooking fish and in 4 mins you can cook from a salmon fillet to a whole seabass split in half, just add a little butter, salt and pepper and it never gets overcooked. Just try it, because we all are convinced microwave ovens are only for heating up pre cooked food and that's a big mistake.

What size/weight ray would you recommend taking for medium size wings to deep fry, I am asking so i can return alive any fish that are too large for my deep fryer!

Rays can't pee and that's what the ammonia taste is, it's the urine coming out through the skin, they do say that if you freeze it, it takes away the taste of ammonia

Nice sewer colored water to eat fish from! Heheh.. 🤘😈🤘 Of course you know if the fish stinks up the house when you are cooking it has been overcooked! Those pliers are pretty sweet. I would have to buy them online because they are impossible to find locally in most states. The only thing missing from this how-to video is a good steel or a presharpened knife. The best way to get cut processing your fish is pushing hard and sawing away with a dull filet knife like that one.

Just a pointer for you, when uptide fishing you should really use a shockleader. I know you are not casting hard but all it takes is a little nick in the 25lb line for it to break and hurt someone. Also love the choice of beer!

Please rename it Ray since Skate is an endangered and protected species once common across the UK. We know Skate dish is Ray in the uk. There was one notable incident where somone killed a common skate to eat not knowing the difference!

Nothing better than a fresh mackerel on a beach barbecue :))

where im from this is bait fish. no one eats skates. we actually look at them as pests. nothing is worst then catching a fucking skate when your trying to catch door mats aka flounder

Great video! When I was in France they served capers with skate which went really well, worth trying.
That’s exactly how I cook them here in Malta, in a very hot oven, in butter, with capers, parsley and lemon

Dad got skate from Oban chippy and said it tasted of ammonia. Would that be from the skin?
Sometimes Skate can give off ammonia... I'm not sure what it is, but I'd associate it with not being fresh or not being stored that well possibly?

if you soak the wings to remove the slime for 3 days, it removes the taste of ammonia.

The wings Paul. There's not really a middle - its guts and bone, as you'll see when we cleaned it.

Just a pointer for you, when uptide fishing you should really use a shockleader. I know you are not casting hard but all it takes is a little nick in the 25lb line for it to break and hurt someone. Also love the choice of beer!

Please rename it Ray since Skate is an endangered and protected species once common across the UK. We know Skate dish is Ray in the uk. There was one notable incident where somone killed a common skate to eat not knowing the difference!

I always feel it's good when people can see it from start to finish. It's something a lot of fishermen take for granted but most people are unaware of. I know this is pleasure and not commercial, but still :)

No worries at all mate and I know what you're saying! I don't take much each year, but have no problem doing so. I had on my 'to-film' list... BBQ Bass and Mackerel, but just never got round to it... perhaps next year! :-)
where im from this is bait fish. no one eats skates. we actually look at them as pests. nothing is worst then catching a fucking skate when your trying to catch door mats aka flounder
