As a Chef, you are all correct. Above about 100$ a person, your food won’t get much better by spending more. At that price point and up you’re essentially paying to see dishes that already exist be turned into art. Usually in these restaurants the price point is no longer meant to make your food taste better, it’s for the little things. Consistency, paying for servers that can handle any situation, accommodating guests needs, getting first pick on produce, hiring cleaning services, buying niche equipment etc.

My grandparents were beekeepers, so I literally grew up munching on honeycombs straight from the hive while running around in the fields. It looks so weird to see a microscopic piece of it presented as a gourmet dish in a 450$ meal. But then again, so does seeing the lonely jalapeno, the fried flower or the one single cooked mushroom.

Reminds me of a story about an old man who's son took him to a high-end restaurant and was served dandelion salad. He told his son when he was a child and was dirt poor he and his siblings would pick dandelions and their mother would make the same salad and now that he has money he's paying to eat the same thing and his mother's was better.

The rich can't relate to these foods, cause they never had a childhood or visited their grandma.
Allways Putting down "poor peoples food" til they taste it and drive the prices up 80 fold (like pork belly, ox tail or lobster)
