Great project. If you change the headlights to anything other than standard (I would also agree on halogens over any of the LEDs available), it's worth putting a relay in line as originally - all power goes through the steering column switch ..which thus fail regularly.
That bit of rear loom that you said is redundant looks like it's for the trailer socket inside the rear cross member.

Yes, there is a trailer socket, but there is an extra loom as well!
