Big long transformation sequences are just eye candy for the veiwer. Within the contex of the story they either happen istnantly or much faster than what we see. The same aplies to stuff like magical girls or power rangers and other stuff like that.
That has nothing to do with Gundam or Gundam Seed or Seed Desteny. It's only another Mecha Series from Japan and there are many more where this came from. ^^
