- Herefordshire cider braised pigs cheeks.Pig cheeks are a much underused cut of meat, but cooked slowly are something special.This is a fantastic,warming,comforting, slow braised dish.The pigs are cheeks are braised in cider with carrot's, onion, fresh thyme and sage,then finished off with caramelized apples.
A great rich, sticky and unctuous stew.This is real food for real people.many thanks.

lol, my butcher is starting to hate me... I think Im the only one in my area who goes in and asks for ox tails, pigs heads, caul, and pork casings.... although it usually starts a conversation with the little old dears who tell me all their old memories of the war! I dont care.... it tastes fab, and thats all that matters, thanks Scott, rock n roll butchery ftw!

Lol. You’re not the only one Lynda. However my local butcher said it’s nice that people are once again trying old cuts that we used to to consume & forgotten about.
I must have been about 18 when I first went in a proper butcher to buy some liver, and asked the guy how to best cook it...he actually seemed really excited about it and gave me a recipe. Kept me talking for ages, lol. I think he was happy 'the youth of today' were giving offal a go and bypassing supermarket plastic wrapped meat.

I just started working for a butcher shop here in America I'm working with the farmer they raise their own pigs sheep and Cattle we sell a lot of pork cheeks I had no idea what to do with them until this thank you so much I know what I'm having for my tea next week

Love the videos Scott. I''ve learned loads and have been incorporating your recipes into my apparently limited culinary abilities. I''ve been cutting my own venison up for around 9 yrs now and had know idea there were so many different cuts of meat to be had. Here in the south U. S. of A we typically cut our deer up the same way. Grind (or mince) the front shoulders, most of the back hams and make steaks out of the backstraps. I recently processed a deer according to the style on one of your vids. The rack of venison made me a star in one fell swoop. Thanks again!
I live in Spain and the Spanish use this cut of meat extensively . Very popular in there stews with brown lentils , potatoes and chorizo. Yummy.

I live in Spain where they LOVE cheeks - I first tried them in the south where they serve them up with mash. SOOOOO underrated by the Brits and I can't imagine why. Especially good if your teeth are a bit dodgy......

I went to the Savoy and had pig cheeks for lunch. My girlfriend was unable to finish the meal and I must admit I found them an acquired taste. Very challenging flavour if you have a mild palate. 6/10

Lovely stuff pigs cheeks. I make a similar type of dish but with beer instead of cider, but I'm going to give this a try as well.
On another note, oil does not stop butter from burning at all. High heat is what burns it and that is the same with or without oil. I don't understand where this myth is coming from.
Anyway, love the channel, espeially the butchery videos, they've been a good help since getting into doing some home butchery myself.

OMG. We are going to a restaurant tonight that is serving pig's cheeks. I'd never heard of them before so just decided to look up how they are prepared. I have to say that your video is AMAZING. I don't know of much English people who will eat this cuts of meat. However these cuts are the tasty cuts and are throw away. Scott could you do a pig trotters recipe just to show the people they don't know what they are missing!! Well done mate Happy New Year
+eightgeorge Lots of English people eat these type of cuts. You are correct though, in that these "cheap" cuts don't get seen on the "celebrity chef" type programmes on TV. I couldn't agree with you more, the "pigs trotters" and offal type meats are actually the tastiest - check out Scott's Haggis recipe (it'll make your mouth water !). These are the recipes my grandma taught me, and when I serve them to my kids they tell me I should be on Masterchef !! I'm no chef, but I can cook a few simple dishes well. Forget all that fancy presentation, give me a simple, well-cooked, tasty and filling dish any day :-)

I'm a pork cheek fanatic. I breed and raise my own Berkshire hogs in the Ozarks in the US. I love pork, of course, but I love pork cheeks. I must try this dish since I usually make Guanciale out of my pork cheeks. This just looks too good. True Pork Porn.
It would be great Scott if you told us what variety of apple you used, they did look like Cox's Pippins but could not be sure. Such an awesome dish deserves the right ingredients.

I have no kitchen experience, but for what it's worth, I am a butcher, just passed 10th year(proudly 😊).
Because pork has a natural sweet flavour, I'd use a tart or "neutral" apple variety. Especially with the sweet and sticky meat that comes from these types of muscles.
