60 Succotash, Equatorial Guinea national dish

  • On this Episode of cooking every national dish, Succotash from Equatorial Guinea
    Succotash from Equatorial Guinea
    Ingredients
    - 3 corns in the cob or 2 cups of corn kernels
    - 4 tomatoes
    - 4 strips of bacon
    - 2 Tbsp oil
    - 1 chopped onion
    - 2 cloves of garlic crushed
    - 2 cups canned lima beans
    - 3 Tbsps chopped basil
    - if you are using corn in the cob cut the kernels out of the corn and set aside
    - blanch the tomatoes by putting them into boiling water for 3 minutes. Peel them and dice them, set aside.
    - cook the bacon in a frying pan. Cut into small chunks and set aside.
    - heat 2 Tbsps of oil in a big pan and sauté the chopped onion for 5 minutes.
    - add the crushed garlic and sauté for 1 minute.
    - add the tomatoes, corn, lima beans and cook on med-high for 15 minutes stirring occasionally.
    - add the chopped basil, bacon and mix.
    - add salt and pepper to taste and enjoy.

    So interesting that something so tied to Native New England fare (I'm in Rhode Island) made it back across through the trade of enslaved people.
    I'm also a Spanish speaker and learned about Equatorial Guinea's language a few years back!
