INGREDIENTS
For the topping (which is the bottom) :
Cooking spray or softened butter for the pan
½ cup/105g dark brown sugar
About ½ ripe fresh pineapple, peeled, cored, and sliced about ½ inch thick*
4-6 maraschino cherries, stemmed ( optional)
2 tablespoons dark rum or brandy (optional)
For the batter
2 cups/290g all-purpose or cake flour
1½ teaspoons/6g baking powder
1/2 teaspoon/2g kosher salt
¾ teaspoon/5g baking soda
¾ cup/180g buttermilk
½ cup/105g vegetable oil
1 tablespoon/15g dark rum or brandy (optional)
2 teaspoon/10g vanilla extract
6 tablespoons/85g unsalted butter, cut into 1-inch pieces, at room temperature
1 cup minus /220g granulated sugar (minus 2 Tablespoons if prefer)
½ cup/85g packed light or dark brown sugar
3 large eggs
2 large egg yolks
Because most people scoop flour differently, I highly encourage the use of a digital scale when measuring ingredients to get consistent results, and I have provided weight measurements for that reason
Yogurt, sour cream, peanut butter, pumpkin purée, and the like are all examples of semi solids: ingredients that fall somewhere between a liquid and a solid. I always measure these types of ingredients in a liquid measuring cup, which gives a little more volume than a dry measuring cup because the cup is slightly bigger. If you are not using a scale to measure these ingredients, I highly recommend using a liquid measuring cup, so your baked goods will turn out correctly.
