Pro tip. Boil 2 tsp vinegar with 6-7 peppercorns with vinegar. Should end with 1tsp. adds great pop

One tip I got from a French chef; ditch the double boiler and start with a pan on the lowest fire setting then put in the yolk with a teaspoon of water then begin to whisk. The whole idea is keeping the temperature at about 60 degree and the fastest way to consistently keep it there is to follow keep the pan on when not warm enough and to keep it from the fire when it is too warm.
Try not to overheat the pan (and conversely try not to let the pan be without heat until you're done) by holding it off the fire then touching the bottom of the pan with your bare palm while holding the handle of the pan with the other hand. If the touch to the bottom of the pan is unbearable or too quick, then move the pan away from the fire while stirring/whisking don't let the pan cool, check again with your palm regularly and put it back on the fire when the touch is comfortable or when the touch lasts five or more seconds. Repeat the palm exercise i.e. on and off for about five times or until you have a sabayon or the sauce passes the back of the spoon test. Then turn off the fire, add four tablespoons of melted butter per yolk then add the acid (lemon juice or vinegar) and spice it to your taste i.e. salt, pepper, etc.

When a hollandaise hets too thick, you can add a touch of your boiling water from under the double broiler, put the sauce back in the heat for a few minutes and whisk, it will thin it out.
