You stop water droplets on the GoPro by spitting on the lens and rubbing it on its sounds disgusting but it works

I went on holiday to Croatia last year and it was amazing. I stayed in Split and me and my Dad went on a boat and visited the beach which Oli was at in this vlog. it's such a beautiful place!!

you can't stop the water droplets on the outside of the gopro but you can stop water and fog on the inside of the protective housing by using anti-fog inserts. I use them on my gopro and my footage is never ruined by fog or water getting inside the protective housing. they cost around £3 on Amazon. or you can cut up small pieces of kitchen roll and use them (as you probably won't be able to order off Amazon whilst in Croatia). just search up a tutorial: "how to use kitchen roll as an anti-fog insert for gopro"
this works really well btw
try it next time you do something like that
Oh for the outside of your lens (on the protective housing) you can either rub toothpaste on it or spit on it them rub it it. haven't tried it but others have said it works

I don't think you can fully stop it from happening though, the best way to clean it is to lick the screen every now and then. I'm not kidding this is actually how it is supposed to be done.
