Looks yum! Good job! You know, I think every moroccan has their own way of making loubya! My mom (and me), we are seasoning with only salt, pepper (not cumin), paprika and one bay leaf! We also add some carrots! My mom says it’s Portuguese (she is moroccan) and that’s how I like it! We eat it as a side dish with fish (sardines especially) or chicken, beef skewers!
In Tangier, usually we add spinach to Lobiya, if using long spinach, you need to chop it then boil it then add it to lobiya 5 min before turning cooker off, if using baby spinach, you add it straight to the beans last minute and let it cook together, also we add sausage to lobiya or mince meat bowls
You are very welcome... I am impressed with humility and your love to our country, Morocco. Thank you so much for that. You integrated into our society despite the wide gap between the two cultures, it's just amazing. Wish you good luck and lots of success. You have a beautiful family God Bless you all and God Bless the USA
Practice makes perfect. Looks delicious. Just a couple tips. Add cumin at end when it almost done. Reason is it leaves a tart taste if you add it at first. The beans after been soaked over night. You may need to boiled then half cooked in a pot and you need to skim off white foam when boiling. Reason for not blowing a storm on bed at night. Ducks in the room .have a good one . Enjoy.
looks amazing, and i am sure it taste incredible , i will be cooking it tonight following your steps why not , love from a moroccan follower in london . lots of love
Looks amazing Erin! So rich!!! The pressure cooker would cook your meal in 20mins, not sure how long that took you. Also a piece of advice, they warned everyone to throw away their black plastic utensils recently as they’ve been found to be highly toxic which leeches into your food, best to use only wood or stainless steel. Keep up the good videos 👍

I don't put ginger in loubia I put cumin paprika pepper and curcuma an onion some garlic some olive oil some parsley and cilantro a tomato and a spoon of Aicha canned tomatoes
Hello Erin, thanks for reminding me of loubia, wow that's been quite a while, That's definitely gonna be my next dish, I just realized that I miss it😅 chokran 🌺
That is correct, if you go overboard with the ginger, your dish will turn bitter. I learned it the hard way. 😅 Well done! You nailed the loubia recipe.👍🇲🇦💚 You mentioned being super gassy from the navy beans in an earlier video and in that regard, I do always use plenty of garlic (I love garlic), a small cinnamon stick, about 4 or 5 cloves and a teaspoon of ground caraway seeds ( karwiya in darija) and finally I do add coriander powder ( which is an important ingredient when making gueddid or Moroccan sun dried meat: it help in preservation.) I know that it may sound a lot, but it did make a difference for me when I heard it from the channel of a Phd food science professor, Dr Faid.
Brilliant. As a Moroccan 🇲🇦, I say you should be pleased and happy of your attempt. Well done. And you can add anything you like. It is your taste and choice. I once added bacon (yes, it is haram and I was naughty). It turned out delicious. Live your life the way you want it. I do. Long live Morocco 🇲🇦
You look more beautiful than Before, by the way. good and positive vibes on your face. Good luck and enjoy the time of your life with yiur kids, regards 😊
Congrats it looks like you did it. Although, I might be wrong, but I think the secret to the Loubia dish relies on the smoked/burnt veal's feet. It's basically a stew similar to the Italian Osso bucco in which the bone's marrow plus the smoked flavor give the sauce its famous taste. Anyone, feel free to correct me if I'm wrong. I love the dish, so I'd love to know the recipe's secrets...
@@momof4vlogs Indeed. I guess it's like pizza. You can make it with what's available... or according to your preferences. I was just curious to know about the tips surrounding this recipe.
Do you have an aluminium couscous cooker ? It’s. It healthy you have to choose inox cooker . And you know you can buy fresh loubia at that same souk for 20 DH the kg it’s very good tasted
@momof4vlogs I guess it was a big pot so it wasn't salty as I thought , by the way if you have the mood and more time , try to cook the tomato and onion on a pan but slice the onion into tin slices cook them tel you see the Onion is brown then add them to loubia when it's cooked . My mom does it like this and it's more delicious but my sister cuz she's lazy she cooks it like this . ( Don't forget the kazbor idk what it's called in English it's those green leaf 🍀🍀 we buy from the guy who sells mint ... Lemon ) you used large beens and they usually take longer to soak them . Most of Moroccans use medium they take less time to cook
@@momof4vlogs I trust your cooking knowledge and I do agree that corn starch is a thickener, but all I am saying is that with white beans or broad beans (with which you make bissara) you should never add corn starch... Trust me i've been eating moroccan food for 60 years now😂 and I have never ever seen a cook put corn starch in loubia... and also, I find it just as good without any animal proteins... but i understand what you did. May i also suggest you add (towards the end of the cooking) a whole chili pepper without cutting it, it will release a bit of heat. As for your pressure cooker, it is a useful utensil because it reduces the cooking time by about 50%... Anyway I appreciate your efforts in trying to cook moroccan food. Well done and don't let me put you off. it is not my intent.
wow your a certified moroccan can you try to make a tajine that has carrots in it and with chicken and olives and etc
Do that weekly. Been cooking Moroccan food for 2 yrs

Machi Mouchekil !!!
You don’t need to add flour to make it thick, just take the lid off, and let it cook then it’ll thicken
Wasn’t flour it was cornstarch machi moshkil

have you tried to cook Harira and chabakya xD?
Good effort, but please no corn starch, just cook it a bit more
I’ve been cooking soups and stews for 25 + yrs. Corn starch works to get it thicker quicker machi moshkil it does nothing to the taste
