Very interesting, I would recommend making the back and front of a enemy easily distinguishable from one another but I assume u will work on that already since this is just a test.
Drawing only 2 sides for the 3d sprites would speed up art workflow only if you're planning on drawing it all by hand in 2D. If you use 3D models and render them out it will be trivial to increase the number of rendered angles. The cost would be a little extra render time, but also more disk space used and RAM\VRAM usage. But it could make everything even more 3D. IIRC DOOM actually had 4 angles (with left and right possibly being flipped versions of the same side angle?).

That was actually my first thought as well but then i realized it had a few problems with the different mechanics in my game.
