- Today, I tried following Chef Thomas Keller's Poularde recipe from his book, The French Laundry & Per Se! Whenever I make Chef Keller's recipe, I am mind blown. Technically, this recipe was developed by Chef Corey Chow, and the results were absolutely mind-blowing for me.
Rich, well-balanced and complex dish and I have no doubt it was the best chicken dish I've ever made!
I hope one day I get to learn from Chef Thomas Keller in person. I cannot imagine how much I will be able to grow!
