    Kaju Mushroom Masala is a popular Indian vegetarian dish made with cashews (kaju), mushrooms, and a rich masala sauce. Here's a simple recipe to make Kaju Mushroom Masala:
    Ingredients:
    - 1 cup cashews (kaju)
    -200g mixed mushrooms (button, cremini, shiitake)
    - 2 medium onions, chopped
    - 2 cloves garlic, minced
    - 3 medium tomato, chopped
    - 1 tablespoon ginger paste
    - 1 teaspoon cumin powder
    - 1 teaspoon of coriander powder
    - 1/2 teaspoon turmeric powder
    - 1/2 teaspoon red chili powder
    - 1/2 teaspoon garam masala powder
    - Salt, to taste
    - 2 tablespoons butter or oil
    - 1 cup water or vegetable broth
    - Fresh cilantro, for garnish
    Instructions:
    1. Soak cashews in water for 30 minutes. Drain and blend into a smooth paste.
    2. Heat butter or oil in a pan and sauté onions, garlic, and ginger paste until onions are translucent.
    3. Add mushrooms and cook until they release moisture and start browning.
    4. Add tomato, cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala powder. Cook for 2-3 minutes.
    5. Add cashew paste, salt, and flour. Mix well.
    6. Gradually add water or broth, whisking continuously to avoid lumps.
    7. Bring the mixture to a simmer and cook for 5-7 minutes or until the sauce thickens.
    8. Garnish with cilantro and serve over rice or with naan/roti.
    Tips:
    - Use a mix of mushroom varieties for added texture and flavor.
    - Adjust spice levels to your taste.
    - Cashew paste adds creaminess, so don't skip it!
    - Serve with rice or roti for a satisfying meal.
