a very promising mod is Knight Quest, it mainly adds a LOT of (mostly) cosmetic armor sets, but it also has some mobs, a bossfight, and a bit more. Overall very high quality stuff!

What about Illage and Spillage? its a really good high quality mod which is still being updated
Theres also hungteens plants vs zombies, which has a bunch of cool features and is a pvz mod for minecraft, its unique and fun and is still being updated
