I fave a fire pit made of bricks that I turned into a smoker. I dug about a foot below the bricks and using the clay like an oven. Put a wrack just high enough to add wood if I need to while keeping the meat off the flame at the same time. I also spased the bricks out for air flow and dug another hole under the bricks to suck air in at the base. Made a lid out of tin. Got me some pork butts I'm about to try out.
Glad you survived to tell the tale. That is probably your BBQ adventure I'm least likely to try and replicate ?!? Can't wait to see what madness you and Peg get up to next time!

Not really, just need to burn a lot of coal before and cover it as much as you can, mud would work perfectly. I`ve done it many times and trust me, the taste is absolutely great.
Let me know if you guys would be into it if I prepared more, or if the threat of me possibly getting food poisoning is something you're into.

You have no ventilation for fresh air to come in or exhaust for air to escape. You need air in and air out for fire.
