How to Make Decorative Christmas Cookies without Royal Icing

  • Every year for Christmas we make these colourful cookies. The dough gets divided into four parts, dyed and a little bit of gentle kneading and cutting out different shapes with a cookie cutter is all it takes to add the holly-jolly goods.
    They come out of my oven by the dozens and disappear in minutes! Basic shortbread cookies are classic, dependable, and can be dressed up or down in all ways.
    These four basic ingredients-plus a dash of vanilla-are all that’s needed to make a dough that bakes up into almost inexplicably buttery and tender cookies with the style.
    They are the best cookies to make and here is an example of how they can be a showstopper for a holiday.
    Adding a little bit of food colour and a clever technique you get yourself a showstopper cookies.
    These vibrant shortbread cookies are crafted to bring joy to the holiday. Each cookie is baked to achieve a buttery, melt-in-your-mouth texture that is simply irresistible. These cookies are not just a dessert but a celebration of creativity and art.
    Dough
    340 g butter
    120 g corn starch
    100 g icing sugar
    240 g all-purpose flour
    1/2 tsp vanilla
    Jam for the filling
    Decoration:
    ⅓ cup of sugar icing
    1 tbsp lemon juice
    Sprinkles of your choice
    Instructions
    Combine butter, cornstarch, powdered sugar, flour, and vanilla in a large bowl using an electric mixer (I use my stand mixer with a paddle attachment). Mix all together until smooth dough forms.
    Knead the dough and divide it into 4 parts. Colour each part with different colours. Green, red, brown and the fourth is without colour.
    Rolled each coloured dough to ⅛ inch (around 3 mm) and cut with cookie cutters in different shapes. Place in a pan lined with parchment paper.
    Bake at 300 F for 10-12 minutes. The pinwheel cookies bake around 15-17 minutes because they are thicker.

    Cool and fill with your favourite filling. I am using strawberry and blackberry jam.
    Make a simple glaze from icing sugar and lemon juice. Spread icing over cookies with the help of a brush. Add sprinkles while the glaze is still wet.
    You can use any sprinkles you wish.
    Serve on a cookie plate and enjoy.
