I just learned that dandelions are edible last week! Apparently they were a staple in a lot of households during the Great Depression. Children would collect as many as they could on their way home from school for their moms to prepare.

There are a lot of common "weeds" out there that are eatable. When I first started gardening, I found out a few of these pesky weeds were lambs-quarter (related to and looks like quinoa) and purslane.

the flower buds can be pickled and are quite delicious (make sure to use TIGHT buds unless you really like vinegar) and in France Salade de pissenlit is actually quite known and usually is served with bacon bits and the fat that gets relased in frying those is serving warm as the "oil" for teh vinnegraitte you would serve the salad with. 10/10 would recommend. Also I really enjoy a pesto made from teh greens (am not a huge pesto fan usually but the flavor here is mild so that you really can load up on the green power)

In England we have a drink called Dandelion & Burdock, which is made with Dandelion and Burdock (a type of thistle) roots. It's a sweet cabonated beverage not too disimilar to Root Beer.

I think one of my favorite things about dandelion is the science around the roots. I'm not a fan of the culture that has developed around the "cleanse " concept, but for people who struggle with fatty liver disorder or damage from certain long-term medication is, it has been shown to be helpful in reversing some of the damage. It is advised, however, to avoid drinking too much when taking certain medications!
Again, not advocating for "cleanses" or any of that, but as someone with a very severe chronic disorder that has needed some heavy meds, dandelion root could potentially be so helpful.
There are also emerging studies involving blood glucose control in T2D.
I think it's mostly just fascinating to watch the growth of scientific love for a weed that was hated my whole childhood!

I’ve recently switched from 40 YEARS of gourmet coffee “addiction” to creating my OWN “gourmet coffee”. I’ve created my own brew balance of dandelion root, chicory root, (roasted of course!) , a bit of cocoa powder and wild Turkey tail mushrooms (which I can also forage for). YUM! And the roasted chicory root and dandelion root “coffee” are FANTASTIC just by themselves. Without the cocoa and mushroom powder. So if I ever don’t have availability (bc supply chain😢), I won’t be “suffering “ without. I personally at a splash of oat milk and a touch of brown sugar, and say “thank you nature”!

Dandelion is not a pesky weed, on the contrary, its health benefits are remarkable! The entire plant is edible. The leaves, flowers, and stems make a great salad, but the best part are the roots, which you can make tea with or roast to drink as a substitute for coffee. I love dandelions!

How can we find out if there is lead in them? I have so many dandys in my yard, but many, many years ago there were factories around my house, and I have no idea if the dirt is bad. My grandfather did plant gardens in his backyard, next door, and he always had beautiful gardens. Now that I think about it, though, there aren’t a lot of dandys growing there, even years after he gardened over there. I really want to pick some, next spring, but, now, I am worried about that. 🙁
