You are on to something here Joe .For someone such as me who does not care for the flat of the brisket, why would I cook brisket again when I can do this? This may come a bit more expensive, but the cook time is way shorter, no need for long rest time, fatty meat seasoned all throughout, no need to deal with dry lean flat, and I get to have some sleep because of the shorter cook time. In a commercial setting, this can be costly, but it seems ideal for backyard cooking. I made bone in dino ribs quite many times, but with this presentation and method, this will be a game changer for me. A FIVE STAR VIDEO

My wife and I own a grocery store and we are known in town for our meat department! One of the cuts people love is this...we sell it as finger meat, cause we only package the strips in between the bones ( the rest goes into ground beef). Excellent cut....great video Joe!!
