That variety is called "Naganegi", which have a longer white stem and are thicker than typical Green Onions / Spring Onions. Their taste is more similar to Leeks.

这家的看起来很好吃,色泽很好看。以前的日式麻婆豆腐带甜的,而且不辣,不过听说现在新一派好像改良过已经没那么甜了,也比较注重突出花椒的香味。我不是四川人但我觉得还是那句四川人去吃的话可能还是会有点不适应。就像你在中国吃最好的泰国餐厅肯定没有在泰国好的。他们会尽可能做到正宗的味道但还是得迎合当地人的口味作适量的调整的,而且有些关键食材也不一定有。这些是无法避免的。
日本の麻婆豆腐は本場のものと比べると辛くないし、スパイスや油の量も少なく味付け自体も異なるので全く別物です。
でも本場とは違う美味しさがありますよ。

Mapo Tofu is made with Tofu and minced meat, typically beef.
if he could just agitate but not stirring the tofu in the wok, it can keep the shape better as cubes... that's very important for presentation

ほんま、みんな席に着くなりスマホにかじりついてるね。自分の注文が来ても、なんか上半身をもぞもぞさせたり、
前後に揺らしたりするだけで、相変わらず脇目もふらずにスマホってる。あんまり良い風景じゃないよね。たまに
スマホらずに「おお、ありがとうっ!」って言って料理を受け取ってる人がいたりすると、本当に気持ちよく感じるよ。
