1 - Brown Onion, Diced
4 - Cloves of Garlic, Sliced

1Tbs - Parsley, Chopped

400ml - Double Cream
250g - Spaghetti

For all people who say this is not a "real" carbonara: it is important to remember that back then dishes were created to a budget. Pizza for example was invented by peasants who had nothing but some dough, tomatoes and goat cheese and they wanted something warm and tasty to feed their family. There is nothing wrong with improving an old dish, especially when it is made clear that it is not the original version. If you are insulted by Chef Ovens putting cream and garlic into carbonara, then perhaps you should consider not cooking your meat because the original cavemen ate it raw.
Nothing to do with budget but all to do with traditional recipe. It isn't about "perhaps you should consider not cooking your meat" because original cavemen didn't cook it. Original cavemen ate raw meat, but we eat cooked meat. But that doesn't mean we call our cooked meat "raw" do we? This is about the labeling, the naming of the dish. He can certainly put any ingredients he wants into any pasta dish, but once he does that its no longer carbonara but something different, something else.
This is a creamy pasta with garlic onions and bacon, but it is not Carbonara. Why call it carbonara when it isn't? Call it something else, it is deceiving to title this as a carbonara and give a recipe which is completely different and nothing to do with carbonara. This has no pecorino, no guanciale or pancetta, and no eggs. It adds onions, garlic, and herbs which are not in the traditional recipe. By labeling this as carbonara, people will think this is how carbonara is made, when its not.
This isn't about whether the dish is tasty or not. It certainly looks good, and I'll eat it no problem. But just don't call it carbonara when it's not, call it what it is - creamy garlic and bacon pasta.
@@kezz1am102 this is pure bs, it's not carbonara it's cream carbonara so it's a different version of carbonara. The original recipe for hamburgers doesnt involve avocado or anything facy either but it's still a burger just a different burger like there are tons of different burgers. Stop this nonsense. A nasi is still a nasi buit there's different types of nasi. Every recipe started with 1 original that was built on by different people in different times.
@@kezz1am102 the pizza point still stands. Anything more than Tomato and Goat cheese, basil if it was around, is sacrilege
By the same token, you can go to several different parts of the world, heck, 7 different parts of one country in some circumstances, Ask for a Kebab and get something entirely different every single time.
I don’t care frankly, so long as it differentiates itself from the original recipe and is labeled as such. When it says ‘modern carbonara’ I automatically know that there is cream in it.
If it says traditional and contains cream, I will crack the shits at the chef, having worked in hospitality for 15 years.
I’ve seen carbonara does all sorts of ways, seen it with Peas, deglazing the pan with white wine, mushrooms, chicken, but it’s never been labelled traditional.
Chicken parmigiana done all sorts of ways, w/ or w/o pasta, or ham, etc.
And it’s mostly only Italians who are like this, why is that ?
I’ve made some wild sushi for some Japanese friends and they loved it.

It's not an improvement but more like an inspiration. I don't like carbonara with cream at all because it's my taste preference. I'm not an Italian but I like the classic original recipe.
This channel should have way more views and subscribers. Chef Jack is a hidden treasure on youtube. The little tips and knowledge he imparts are of a knowledgeable chef. The camera angle and closeness is just right. I can see exactly how he prepares the food, IE: his cutting methods. And the no non-sense approach of going straight to the teaching of the recipe is refreshing and badly needed. We don't need to hear unnecessary stories or jokes like in other cooking channels. The man of few words, Chef Jack Ovens is ironically a powerhouse of cooking knowledge dispensary.

I used to live in the Languedoc region of France and pasta carbonara was on the menu in every restaurant we went to. It was made this way but it was served with the whole egg yolk in the center of the mound of pasta and you’d do the mixing yourself. I now live in the Nouvelle Aquitaine region and I’ve never seen it on a menu. Thank you so much for providing this recipe. I’ve been trying to reproduce it for years and I never got it right. This will be tomorrow's dinner!

I love traditional carbonara but I was craving one with cream and bacon today! Also I ate two eggs this morning and that’s generally my limit of eggs per day. At least that’s what our local doctors recommend.

My rule of thumb has always been,
British Carbonara at home,
Italian Carbonara at a restaurant.
As it's just so easy to screw up an Italian Carbonara at home, as it can turn to scrambled eggs within seconds.
Whereas cooking a British Carbonara is pretty fool proof and once you have a good recipe you're golden.
This recipe is definitely a winner mate.
my dad bought some ham that was due to go out of date tomorrow without realising he was about to bin it and I was like no we can cook something with it, I have never made carbonara but this recipe and clear instructions really helped turned out pretty good for my first thank :) ill be sure to check out of your stuff

I tried this last night and it blew me away. I used to do carbonara the traditional way but it never quite was the taste of the carbonara served in nearby joints.
It’s the non traditional way of course but I like this one way better. The lightly caramelized hints of the onion, the heavy cream is just excellent. I used garlic and herb butter at the beginning too, and added mushrooms. It’s the most delicious thing I’ve made in my kitchen thus far!

This is how most places have their cabanara atleast around Nc unless I guess super authentic Itallian? I’ve always known it to have cream in it…never knew it didn’t until recently

That Carbonara turned out awesome buddy. The way how you explain everything is on par. I followed the instructions very easily and my carbonara looked like yours, except I added mushrooms and pancetta with the bacon because I like them.

Great carbonara. Many Italians ask me why my carbonara tastes so good. It's because sometimes I add leftover cream. They can't believe it.. They're from all ages.. from Rome, lovely people. I recently noticed one of them started using cream as well and pointed it out and she asked not to tell her family who was visiting. They also loved it. Such are the Italians. Lovely but sometimes a bit restricted :)

Chef, it is a nice, easy, tasty recipe, I used to do a similar "carbonara" ... BUT ... please do try and show us your version of the real Italian one :)
I used to think that the real carbonara is difficult to prepare, than I tred, and it is even easier and quicker to make! (no onion, no herbs, no garlic = less chopping).

You sure can. If using dry just use a little bit less, as they are stronger in flavour.

A duck is a duck, a chicken is a chicken. Just because you roast a duck with and serve it with chicken gravy doesn't make it a roast chicken.
Carbonara is only 4 things - cured pork (guanciale, pancetta or bacon), eggs, and cheese (pecorino/parmigiano) and the pasta.
If it is not these 4 things, then it is a *different* dish.
When you add a bunch of different ingredients - it will still be tasty, it will still be a nice dish - but it is NOT the original dish, it is something new.

I've noticed some of your most delicious-looking recipes use heavy cream. I'm trying to cut down on dairy - have you tried milk alternatives, like almond milk, perhaps? If you have, how have they turned out? And yes, I'm aware it won't be nearly as rich and delicious.

While some recipes *do* call for adding whole eggs, because the whites solidify at a lower temperature than the yolks, using the whites increases the odds of the texture turning into scrambled curdles instead of becoming creamy.

I do one whole egg and the rest are egg yolks because the one egg white just does something to the sauce that i cant explain but i think its better

I know this may sound ignorant of me... but creamy carbonara is basically all cream? Here I thought it was like... at least maybe 2/3 cream, the rest eggs or something. I didn't know it was basically full on cream. Thanks for the video, will be trying this.
This isn’t a traditional recipe of carbonara. It’s cream based so a lot of cream is used. I have the original/traditional recipe on the channel too.
No I thought the same! Until recently I see alit don’t even use cream. This looked more of what I’ve eatten in my area atleast Nc….so your not alone

Pepper, yes! I read that it’s called carbonara because of the large amount of black pepper in it.
This is the one I was looking forward to that everyone’s carbonara look for creamy, but no one puts heavy whipping cream in. It sounds really good thank you. I do have weird question how is this is not real carbonara because all the carbonara recipe is I’ve been seeing are the exact same. The only thing is he’s using cream and one less egg and actually have some flavor in it. Everybody else literally use two eggs, some Parmesan cheese bacon maybe a piece or two would be down in there how was the original?

Guys. I prefer this than the traditional one.
Tried this and compared it to a 100% traditional version. I left out the garlic on this one as I don't like it ........but overall I thought this was so much tastier than the traditional version.

Most traditional foods come from poor people who couldn’t afford good ingredients-modern versions will almost always taste better, even just because of simple additions like onion and garlic.
