If you put diamond ore in a furnace(which they could've gotten by standing on some cobblestone generated by lava and water) and smelted it you would get a diamond. My minecraft knowledge is beyond comparison at this point...
You could have made a furnace and smell the diamonds using planks or if you can't make a furnace just go to the black smith village or one of the villager house that has a blast furnace
They went through so much trouble breaking the diamond ore to get diamonds while there was cobblestone right by them and they could have walked over it, gotten the cobblestone, made a furnace, and smelted the ore to get the diamonds
