looks great.....Two things I would change.....I would move the cooler down under the floor somewhere and the garbage can up into the front passenger storage area with an access door in the pass through area. That way people dont have to get up and out of their seat when those things need to be accessed.

Having a hard time figuring out ballast weight and speed for our 2021 G23! Any suggestions?

For surfing? 100 percent on the front and the side I’m surfing in and 90 on the other side and for Speed I set it too 11.1-11.5 depends on how the surfer likes it

Pavati is not nicer in anyway. They are simply different and over priced. The only thing driving the pavati price up is welding labor. You buy a Stabi craft 2750 fishing rig loaded out for $150k and arguably just as nice as a pavati.
