- Recipe for Thin Sev or Ompudi that can be had as a light evening snack with Tea/Coffee. Often served with chats like Masala Puri and Sev Puri. Narrated in Kannada with English subtitles.
Ingredients:
Ajwain or Carom Seeds - 1 Tbsp
Bengal Gram flour or Besan - 2 Cups
Rice Flour - 1/2 Cup
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tsp (Optional)
Oil - 2 Tbsp
Oil - for deep frying
Instructions:
1. To a bowl, add 1 Tbsp Carom Seeds. Add 1/4 Cup Water and soak for an hour.
2. After an hour, transfer to a mixer jar and grind it. Sieve this and take out only the water from it.
3. Add 2 Cups Bengal Gram flour or Besan to a mixing bowl.
4. Add 1/2 Cup Rice Flour, 1/2 tsp Turmeric Powder, Salt, 1 tsp Red Chilli Powder and mix everything well.
5. To a small frying pan, add 2 Tbsp Oil. Heat till it is piping hot.
6. Now add the hot Oil to the flour mixture and mix once with spoon. Now with the help of your hand mix everything once so that the Oil mixes well with the flour mixture.
7. Now add the extracted Carom Seeds Water and mix well. If needed add more water and prepare soft dough.
8. Take a small holes plate and fix it to the Chakli press. Fill the press with the prepared Ompudi/Sev dough.
9. Heat Oil for deep frying.
10. Once Oil is hot, press the dough directly into the Oil in spiral shape as in the video.
11. Turn to other side once it is fried on one side and fry other side of the Ompudi. Once done, remove to a strainer to strain excess Oil from it.
12. Repeat the same process with remaining dough.
13. Once the Sev/Ompudi cools, and store it in an airtight container and can use up to 20 days. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
