Batangas Barako Batangas is a province in South Luzon and Barako is a variety of coffee can be a Liberica or Excelsia. There are also other available Barako not just in Batangas. Buengget also produces the same Barako with its distinct flavor, also delicious as well.
It's actually kind of interesting learning how Spanish influenced Filipino culture, as in East Asia (as well as northern Vietnam I guess) we don't have a word linking stud with masculinity as Spanish _varraco,_ Tagalog _barako_ or English _stud._ In Mandarin, for instance, the word for stud (種獸) could be never used on a human (or it would indicate something like _bastard_ or _tool_ thus very offensive). We do have several words for "manly" and "valiant" but those words have no link with stud. Thus I guess it's better not to advertise the meaning of the word when selling this coffee in East Asia.
Barako can be prepped several ways. Best when boiled. Muscovado for black (you can add evaporated milk but best with Carabao's milk). It can also be prepped using condensed milk.

Barako is liberica which is quite rare and hard to produce since you can only harvest once a year. Taste wise i still prefer arabica especially the ones from mt. Apo or matutum. If you can get hold of those beans youll love it for sure.
Wow! I love that same coffee! Kapeng Barako! I live in Batangas where that coffee theoretically came from :D You have to reseal the package after opening it :D The way we prepare our Kapeng barako is by boil and filter method. Boiling surely does the job of extracting richer flavor and aroma!
@@noobz8613 i get it, but in the first place the coffee beans were burned from its previous full of life seed form, almost charred into a hard bean state then grounded. So there, i don't think boiling the coffee make it less potent for our taste buds, in fact, boiling helps extract all the goodness from the grounded-burned-coffee-beans. I don't know why this got recommended but I do love coffee. Barako is rough and tough haha. You might want to try my favorite, Sagada coffee. Sagada coffee is Arabica variety grown in the highlands of Sagada province. I love drinking it just plain brewed without sugar or muscovado. I hope you try Sagada coffee if you ever have a chance in the future. Enjoy!
That's a lot of sugar. Muscovado is basically an unrefined sugar from sugarcane. The more darker ones are often used for ricecakes and other sweets/deserts.

You should also try the most expensive coffee in the Philippines, the civet cat poo coffee. Yup. You heard me right. Civet cat poo as in 💩 coffee. Known to be the counterpart of kapeng barako but mild and addictively delicious.
try boiling it... letting it boil for a few minutes, reduce heat, then add sugar while boiling for 2-3 mins.. turn off heat. let sit for a while maybe 3-4 minutes until the grounds settle at the bottom. then enjoy.. :)
when buying this from non filipino market make sure you get the "cofea exelsia"(not sure if spelled correctly) since its the specie that is actually used for Kapeng Barako but some use Robusta or Arabica and roast it dark then labeled it as "Barako" which is false ps . i tried this one its strong enough to give me shivers
Fun fact: At one point in time Philippines was the only supplier of coffee in the world during the late 1800s. Coffee rust ruined it and it never really recovered. Barako used to cost 5 times as much as regular coffee. Duterte made a plan to revive the coffee industry so PI can be coffee independent.

Before, I cannot appreciate coffee from SB reserve. They're too acidic for me. But damn, after tasting a cup of Barako. I can say, may ibubuga ang Kapeng Barako. To appreciate the coffee, I usually do this 3 steps 1. Try your first sips with plain (just hot water) 2. Add 1 tablespoon of muscovado sugar, sip 3. Add milk (personally, I Add 1-2 tablespoon of bear brand) - - > my personal fave. Hehe. Enjoy!

Better if you use a French press. The locals in Batangas actually boil them and just sifts the residue. Use brown sugar if you like it sweet...
