Recipe to try from India- I used to make this twice a week whenever I felt bored but was too lazy to cook anything when I was in college. Do try it out and i think you will like it:
1 medium sized onions chopped, garlic g& ginger paste, 1 large chopped tomato, 2-3 green chopped chillis, corriander/parsley, 2 beaten eggs. a slice of lemon, some buns or dinner rolls (toasted). Spices- 1 tsp of red chilli powder, salt & pepper, 1 tsp of turmeric powder.
Saute the onions with the ginger garlic paste until it's transparent, then add the the chillies and the tomatoes. Once the tomatos release water, add the spices. Once there is no water left and the tomatos are cooked, add the eggs and you can either scramble it well cooked. But I prefer them slightly still runny under low heat. Add the chopped corriander and squeeze some lemon into it and turn off the heat.
You can eat this with the toasted buns or bread of your liking. It's SO simple to make, filling and made with simple ingredients. It's called an egg bhurjia. i love watching your videos, they're so wholesome to watch. All the best for 2023. ❤
