One of the best cooking channels I’ve ever watched. Why? It’s very relatable, feels like you are part of the entire process (prolly because Juday wasn’t cutting any parts that she failed, she’s not perfect, she shared her struggles) This channel isn’t the same as other “western” cooking channels that you have to be perfect in just one go. She showed her vulnerability and it makes it more relatable and more fun to watch.

As an Ilokano home-cook from La Union, this content of yours entertained me the most! I love how you showed us that in every recipe, there's always a trial and error. That's reality! I heard Ryan say that the papaya is making the dough soggy. Did you squeeze the juice out of the papaya after you shave it? That's what we do po kasi. After shaving the papaya, we blanch it and then squeeze dry it again. For the dough, maybe a little bit thinner than what you have done and be generous about the oil because that's what prevents the dough from drying, which causes it to easily tear.
Hindi rin po scrambled egg ang gamit ng Vigan. Fresh eggs po talaga just like what Ms. Juday did. Ang nagkaibahan lang ng VIGAN empanada sa ibang empanada talaga is ung DOUGH gaya ng sabi ni Ryan. Mas manipis po ung samin at mas crispy pag naluto. Yung iba kasi makapal just like sa Norte and other part ng Ilocos.
I think yung sa middle na lagyan ng toppings duon ang mas makapal para carry niya ang toppings yung sa side kahit manipis na, opinion lang po😊 i love Juday 😍

I used to make ilocos empanada po nung mga nasa 15 years old pa lang ako. Iluluto po ang rice flour sa tubig with oil, anatto powder,salt/ seasoning(optional) and paminta at magdagdag lang hanggat makuha ang tamang consistency not that so sticky tapos imamasa po sya with a dry rice flour. Tapos pag gagawa na po ay isasawsaw po sya sa mantika na nasa kawali. Lagay na po ng fillings, pa-glide lang sya sa kawali pag ilalagay sya and pag flinip naman po sya ay sa gilid po ng empanada ang iipitin kasi yun po ang matigas na part para di sya bumuka. I'm a proud ilocano.❤

I think this is one of the most genuine cooking channels here on youtube. Ang relatable kasi nasa learning stage pa rin si Juday sa pagluluto ng Ilocos empanada and there were some evident misses, pero na-emphasize na hindi palaging successful ganun. This also goes for other Filipino recipes na trial and error din talaga kasi halos lahat ng recipes that we have here ay hindi standardized, so yung luto ng isa sa ganitong putahe ay ibang iba sa luto ng iba.
I love the part where she lets her children feel included and be part of the process! It's indeed a big help sa development ng bata. For instance, ako nung bata, pinapagalitan ako kapag nakikielam ako sa kusina kaya lumaki akong walang alam kundi magprito ng hotdog hahaha. A big applause sa good parenting style niyo, Ms. Juday!

Yum! My mom is from Vigan and I always look forward to our yearly visits because of it, I grew up watching the manangs from the Vigan plaza making empanadas. Opting to only use the yolk for the filling was a really good idea po as they really do only use the yolk for the filling po sa Vigan then the whites they incorporate it po sa veggie filling. Using banana leaf instead of plastic makes a difference din po talaga based from experience, it's less stickier so you don't really have to pick up the empanada from the leaf with your hands to put it in the pan, you can just grab the whole leaf po then tip it to the pan then and let the empananada gently fall into the oil. It really helps din po when you flat the veggie filling a bit with a spoon after putting it in the dough so it's more even and less bulky po to lessen the risk of breaking the dough. Correct din po yung sa oil thing because in Vigan, before rolling the dough, they dip it in oil from the hot pan where they cook the empanada then use the dough to spread it all over the banana leaf before rolling the it really thin. Looking forward to a Vigan Okoy recipe as well din po, way more easier than the empanada but very unique compared to the usual okoy 😊
hello po. dapat po ata yung dough, niluluto siya. parang sa paggawa ng cream puff dough din yung approach sa paggawa ng ilocos empanada dough (like sa boiling water with a bit of oil dapat ilagay yung rice flour tapos dun sa pan i-mix then knead the dough after). yun po kasi nakikita ko sa mga naggagawa. still a great episode though. looking forward po for more episodes and of course a second attempt in cooking ilocos empanada. 🤍

Try making your dough like a choux paste. 3cups of water to 450-500grams of rice flour. Boil water along with your seasonings and your anatto powder. Mix your rice flour in your boiling water. Stir. Once absorbed, turn off your fire. Let it cool. Start kneading your dough. Hope this helps 🙂

Ang healthy ng comment section. Nakakatuwa magbasa ng mga idea from different perspective/experience. Kudos sa community. Ito lang po yung napansin ko sa mga napapanood kong nagluluto ng empanada; 1. Parang hindi po ganon kadami yung mantika na nilalagay nila sa dough, para kasing mas lalong lumalambot yung texture hence mabilis mabutas? 2. Yung iba naman nagbabawas talaga ng white eggs lalo na kapag malaki yung egg, para hindi siguro lumobo yung loob, para maiwasan din ang liquid na magreresult sa pagkabutas? 3. Parang mas malapit po yata sa nagluluto yung pan kung saan lulutuin yung empanada, para siguro mas mabilis madrop sa hot oil? And then parang hindi na po yata nililipat sa kamay? Yung plastic na yung mismong hinahawakan nila para matransfer sa oil. Will wait for the next attempt. Sama-sama tayong matuto 😂

Hello miss Judy, sa paggawa po ng rice flour dough hatiin niyo Po ang rice flour niyo ang half part po lagyan niyo ng hot water then mix it well kapag ok na saka niyo po ihalo ang sa natirang half rice flour mix well at add ka po ng water pa konti konti hanggang makuha niyo ang tamang mixture. Tapos e rest niyo ng 30min. Ganyan po ginagawa ko dito sa hk kapag gumawa ako ng dumpling using rice flour. Try niyo po.
i really adore and admire the honesty and authenticity of ate Juday on her recipes, no doubt that a lot waits for her comeback in vlogging and i really believe that she is a very good cook. Nobody's perfect, everyone commits mistake and ate juday did it in a good way complementing and giving respect to the original and authentic makers of the recipe. Chef RV Manabat did a version of this. I think nasa wrapper yan. Niluto kc ni Chef RV ung rice flour and d n sya naglagay ng oil sa plastic. Then ung pagtransfer ng trimmed wrap using a sadle for transferring sa pagprito dpt ibaligtad dun sa sadle mismo not slide it dahil masisira ung wrapper if you slide it.

Come visit the empanadaan in Batac po, I'm sure Lola Glory Cocson will give you tips. :) You can add boiled and split monggo beans din sa filling kasama ng papaya. Much better din po if you use native bawang dun sa longganisa, I think yun ang difference between the ones made here in Manila and Ilocos. Great idea din yung paggamit ng lumpia wrapper with the same filling, tinitinda at sikat na din sa Ilocos ang 'lumpianada'. Great attempt nevertheless! Yung food coloring po pala ii add na siya pag nagboil ang water...pag medyo ok na yung ratio nung water at rice flour enough to get that consistency we like, tanggalin po yung dough from the pan ( sa pan po pala mag boil ng water ) then mag masa na Ms Juday 😊 good luck po...dito sa US wala din masyado mabibilhan niyan...Hawaii lang meron so dito sa Cali you crave you cook ang peg..haha so since purong ilocana kami i had to learn it din po kase we love the Ilocos Empanada ♥️

Bilang ilocana who is away from home and crave this from time to time, i also tried making empanada and medyo mahirap mo talaga sya. Pero practice lang. 😊 As pero observation lang while they are making this in the streets of Vigan, they put the longganisa in the wrap na raw kasi maluluto na po sya while frying the whole empanada. And as for the egg, hindi po nila nilalagay lahat yung egg white. Lalo ma if medium to large po yung size ng egg. Binabawasan po nila yung egg white. As for the dough, kudos po! Challenging po talaga maperfect yung wrapper ng empanada pag beginner ka and tip po, they make it parang sa paggawa ng choux pastry. They cook the flour in a boiling water po. Anyway, so nice that you tried it miss Juday! And showed how hard making empanada is and all of its trials and errors.
Kakagawa ko lang ng Ilocos Empanada kahapon bago ko mapanood ‘to and I can relate to this. Failed mostly, I just realized pwede din bawasan ng egg white para di masira or mabasa yung wrap and for the dough ,I need to experiment with it. I just read a comment that you need to squeeze out the juice of papaya. I blanched it pero di ko piniga. 😅 Thank you for the tips.😊 My gf is like Ryan sobrang supportive and she tried to wrap one too! It also broke so we ended up eating Air Fried Deconstructed Empanadas. 😅 We both love Ilocos Empanada and it’s not always available where we are now unlike when we were living in La Union.

How about try sprinkling some rice flour before putting the filling? Not sure pero it might help to protect the dough from getting wet.

hello po. dapat po ata yung dough, niluluto siya. parang sa paggawa ng cream puff dough din yung approach sa paggawa ng ilocos empanada dough (like sa boiling water with a bit of oil dapat ilagay yung rice flour tapos dun sa pan i-mix then knead the dough after). yun po kasi nakikita ko sa mga naggagawa.

Try making your dough like a choux paste.
3cups of water to 450-500grams of rice flour.
Boil water along with your seasonings and your anatto powder.
Mix your rice flour in your boiling water. Stir. Once absorbed, turn off your fire. Let it cool.
Start kneading your dough.

Ito lang po yung napansin ko sa mga napapanood kong nagluluto ng empanada;
1. Parang hindi po ganon kadami yung mantika na nilalagay nila sa dough, para kasing mas lalong lumalambot yung texture hence mabilis mabutas?
2. Yung iba naman nagbabawas talaga ng white eggs lalo na kapag malaki yung egg, para hindi siguro lumobo yung loob, para maiwasan din ang liquid na magreresult sa pagkabutas?
3. Parang mas malapit po yata sa nagluluto yung pan kung saan lulutuin yung empanada, para siguro mas mabilis madrop sa hot oil? And then parang hindi na po yata nililipat sa kamay? Yung plastic na yung mismong hinahawakan nila para matransfer sa oil.

Hindi naman ako nadisappoint na hindi nagawa ng maayos. In fact, naexcite ako and something relatable. Kasi ganun nman talaga ang pagluluto. Papalpak ka talaga until you perfect the dish. Hello miss Judy, sa paggawa po ng rice flour dough hatiin niyo Po ang rice flour niyo ang half part po lagyan niyo ng hot water then mix it well kapag ok na saka niyo po ihalo ang sa natirang half rice flour mix well at add ka po ng water pa konti konti hanggang makuha niyo ang tamang mixture. Tapos e rest niyo ng 30min. Ganyan po ginagawa ko dito sa hk kapag gumawa ako ng dumpling using rice flour. Try niyo po.
i really adore and admire the honesty and authenticity of ate Juday on her recipes, no doubt that a lot waits for her comeback in vlogging and i really believe that she is a very good cook. Nobody's perfect, everyone commits mistake and ate juday did it in a good way complementing and giving respect to the original and authentic makers of the recipe. Hope that she can make it perfectly for her 3rd attempt, nothing is impossible cause there's always room to improve and i know that she can make it on the very perfect time and process.

Chef RV Manabat did a version of this. I think nasa wrapper yan. Niluto kc ni Chef RV ung rice flour and d n sya naglagay ng oil sa plastic. Then ung pagtransfer ng trimmed wrap using a sadle for transferring sa pagprito dpt ibaligtad dun sa sadle mismo not slide it dahil masisira ung wrapper if you slide it.

Come visit the empanadaan in Batac po, I'm sure Lola Glory Cocson will give you tips. :) You can add boiled and split monggo beans din sa filling kasama ng papaya. Much better din po if you use native bawang dun sa longganisa, I think yun ang difference between the ones made here in Manila and Ilocos. Great idea din yung paggamit ng lumpia wrapper with the same filling, tinitinda at sikat na din sa Ilocos ang 'lumpianada'. Great attempt nevertheless!

Yung food coloring po pala ii add na siya pag nagboil ang water...pag medyo ok na yung ratio nung water at rice flour enough to get that consistency we like, tanggalin po yung dough from the pan ( sa pan po pala mag boil ng water ) then mag masa na Ms Juday 😊 good luck po...dito sa US wala din masyado mabibilhan niyan...Hawaii lang meron so dito sa Cali you crave you cook ang peg..haha so since purong ilocana kami i had to learn it din po kase we love the Ilocos Empanada ♥️

I so love this. it's basically Behind the Scenes of what actually happens when developing a recipe. Ilang beses papalpak, mag-aadjust ng ingredients, magsasanay ng technique. Very chaotic but I love it!

Bilang ilocana who is away from home and crave this from time to time, i also tried making empanada and medyo mahirap mo talaga sya. Pero practice lang. 😊 As pero observation lang while they are making this in the streets of Vigan, they put the longganisa in the wrap na raw kasi maluluto na po sya while frying the whole empanada. And as for the egg, hindi po nila nilalagay lahat yung egg white. Lalo ma if medium to large po yung size ng egg. Binabawasan po nila yung egg white. As for the dough, kudos po! Challenging po talaga maperfect yung wrapper ng empanada pag beginner ka and tip po, they make it parang sa paggawa ng choux pastry. They cook the flour in a boiling water po. Anyway, so nice that you tried it miss Juday! And showed how hard making empanada is and all of its trials and errors.

Kakagawa ko lang ng Ilocos Empanada kahapon bago ko mapanood ‘to and I can relate to this. Failed mostly, I just realized pwede din bawasan ng egg white para di masira or mabasa yung wrap and for the dough ,I need to experiment with it. I just read a comment that you need to squeeze out the juice of papaya. I blanched it pero di ko piniga. 😅

As usual I enjoyed watching this video. Judy Ann, tama na yolk lang ilalagay mo sa center. Yung grated papaya dapat squeezed out yung liquid after grating. I also noticed medyo napadami yung water sa dough. Siguro i-sub mo additional oil. I'm sure masarap yung timpla nung longganisa mo kasi madaming bawang.
