Wether or not I'd have that level of patience remains to be seen but I bet that's an excellent cup of coffee, a lot better than the Starbucks ground coffee I use...

If the guy is talking active, it's must be damm annoying, trying so hard,etc..if he kinda quite, just don't want to taking, only showing the work, then he's ROBOT, he don't have any feeling, he's stress out,etc.. Now... I'm totally into my 3rd wave coffee, and very much enjoyed this video... but my god... that seems like an awful amount of work for a coffee! He must charge an arm and a leg to brew that cup...
The Japanese are fully aware that they are viewed as perfectionists and meticulous so they put up these shows and charge top dollar for them. As long as there are foreigners and people willing to spend these kind of money for this "once in lifetime" experiences these places will line their pockets with sweet sweet yens.
