When i think Italian dishes, i think of famous Pizza Napoletano(in Napoli/Naples where Pizza came from),Risotto, capuccino(do not order it in the afternoon and for italians it is a morning coffee), Pasta, Tiramisu(my favorite italian dessert), Piccata Milanese, and etc. There are a lot to mention and they are all very delicious. Try the local speciality foods and it has better quality than in the supermarket.
As in almost all European countries, Italy has its culinary regions, in the north for example risottos and polenta. You won't find pizzas in upmarket Italian restaurants! It's best to ask the locals, it will save you disappointment and money. Get away from the tourist spots. Another tip, in general, avoid restaurants with large menus, and definitely never never if there are pictures on the menu!

Here in Rome we have more than 70 typical recipes ranging from fish, meat, vegetables, pasta, pizza, cheeses and desserts, which should be tried at least once in a lifetime.
First thought: they did it right ... avoid Rome in the hot summer months "real" Italian food sometimes comes in an unexpected way (like the pizza) .. my general idea is that food in Italy is not just made with love, but also with proud ...of being original recipe with original/basic indegredients and mostly totally fresh prepared. When I was in North Italy I was surprised to see often as their starter/appetizer: french fries...
We do not eat pizza at lunch in italy. Restaurants that serve you pizza at lunch are 99 percent turists traps. If you want pizza in the morning/afternoon you have to find pizzerie al taglio (slices on the go). P.s. that "pizza" wasnt pizza at all, was a flatbread with mozzarella and cold cuts...
you reacted to some of the most clueless tourist I have ever seen! You know, the ones who think they are too educated and classy to go on a pre planned or guided vacation, but, given their knowledge of Italy and Rome they would have probably had a better experience with some good italian guides advising them
