There was liquid petroleum on the toilet and we know it is flammable that's why (it's even saw in the earlier scenes where Kevin was building his booby traps for those two bad guys including Harry). The first one did also got his head on fire but he putted it on snow, which was actually just water crystals that didn't have enough time to melt due to the season and weather when the film was set.

That would be a really bad idea. Although it seems like the logical thing to do, if the burning wool of the beanie has come in contact with his skin they may have fused together, and taking off the beanie could take his scalp with it.
